AUTHENTIC MEXICAN SHRIMP COCKTAIL (COCTEL DE CAMARONES ESTILO MEXICANO)

Authentic Mexican Shrimp Cocktail (Coctel de Camarones estilo Mexicano) image

I prepare this refreshing shrimp cocktail for my family a lot during the hot summer days. Being a Mexican family, we always add Mexican hot sauce (such as Valentina® or Tapatio®) and serve with saltine crackers on the side. The trick is to start with well-chilled shrimp, ketchup, and tomato juice cocktail so it can be ready after only chilling 1 hour in the fridge. Top with additional hot sauce and avocado slices if desired. Enjoy!

I first tried something similar to this in San Antonio and could never find a recipe that really recaptured what I had there. I experimented and finally came up with this. Anyone who has tried it has begged for the recipe. Try it with tortilla chips!

Number Of Ingredients 10

12 large shrimp (1/2 lb)
2 plum tomatoes, finely diced
1 scallion, thinly sliced
1 small garlic clove, minced
1 tablespoon fresh lemon juice
1 tablespoon fresh lime juice
1 teaspoon salt
1/2 teaspoon black pepper
1/2 California avocado
Garnish: lime wedges

Steps:

  • Cook shrimp in boiling salted water, stirring occasionally, until just cooked through, about 3 minutes. Drain, cool, and then shell, leaving tail shells attached if desired. Chill until cold, at least 15 minutes.
  • Stir together tomatoes, scallion, garlic, lemon and lime juices, salt, and pepper.
  • Just before serving, finely dice avocado and stir into tomato salsa. Spoon salsa into 4 serving dishes and arrange shrimp and lime on top.

Tips for Making the Perfect Mexican Shrimp Cocktail:

  • Use fresh shrimp. Frozen shrimp can be used, but fresh shrimp will give your cocktail the best flavor.
  • Poach the shrimp properly. Overcooked shrimp will be tough and rubbery. To poach shrimp perfectly, bring a pot of water to a boil, add the shrimp, and remove from heat. Let the shrimp sit in the hot water for 3-5 minutes, or until they are pink and opaque.
  • Use a variety of vegetables. This will add color, flavor, and texture to your cocktail. Some good vegetables to use include tomatoes, cucumbers, onions, and avocado.
  • Use a flavorful sauce. The sauce is what really brings the Mexican shrimp cocktail together. A good sauce will be tangy, spicy, and flavorful. You can use a store-bought sauce or make your own.
  • Serve the cocktail chilled. This will help to keep the shrimp firm and the vegetables crisp.

Conclusion:

Mexican shrimp cocktail is a refreshing and flavorful seafood appetizer that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a delicious and impressive appetizer, give Mexican shrimp cocktail a try!
