CANDIED SWEET POTATOES

Candied Sweet Potatoes image

When Fred Harvey opened his first Harvey House restaurant in 1876 on the railway line in Topeka, Kan., his idea was radical for the time: Railroad passengers would be fed good food in a pleasant environment. His concept was so successful that it spawned 84 restaurants, a Hollywood movie and an official cookbook. And it was in "The Harvey House Cookbook" that we found this excellent recipe for sweet potatoes candied with confectioners' sugar and butter. It is best served warm rather than piping hot, which makes it convenient for big meals like Thanksgiving. Bake it before you roast your turkey, then reheat it briefly just before serving.

Tips:

  • Choose the right sweet potatoes: Look for firm, evenly shaped potatoes with smooth skin. Avoid any that are bruised or have blemishes.
  • Prick the potatoes before baking: This will help them cook evenly and prevent them from bursting.
  • Bake the potatoes until they are tender: This should take about an hour, depending on the size of the potatoes.
  • Let the potatoes cool slightly before handling them: This will make them easier to handle and prevent them from breaking.
  • Scoop out the potato flesh carefully: Leave about 1/4 inch of flesh around the edges of the potatoes to create a sturdy shell.
  • Mash the potato flesh with butter, milk, and seasonings: Use a potato masher or a fork to mash the potatoes until they are smooth and creamy. Add butter, milk, salt, pepper, and any other desired seasonings to taste.
  • Fill the potato shells with the mashed potato mixture: Use a spoon or a piping bag to fill the potato shells with the mashed potato mixture. Top with cheese, bacon, or other desired toppings.
  • Bake the potatoes until they are heated through and the toppings are melted and bubbly: This should take about 15 minutes.
  • Serve the potatoes immediately: Garnish with fresh herbs or a sprinkle of paprika for added flavor.
