CONGO SQUARES

This recipe was given to me nearly 50 years ago, at a company picnic, and it's our family's favorite dessert. Now my grandchildren bake it for their families. When each of our three sons got serious about a girl, sure enough, I'd get a call from a young lady requesting "his favorite dish". I always gave the girls this recipe.

Time 45m

Number Of Ingredients 9

2/3 c shortening
2 1/4 c brown sugar, firmly packed
2 3/4 c all purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
3 eggs, beaten
1 Tbsp vanilla extract
2 c semi-sweet chocolate chips
1 c nuts, chopped

Steps:

  • 1. Combine flour, baking powder and salt, set aside.
  • 2. Melt shortening, stir in brown sugar. Cool slightly.
  • 3. Add dry ingredients gradually with eggs.
  • 4. Stir in rest of ingredients.
  • 5. Put into a greased and floured 9x13 pan and bake at 350 degrees for 25-30 minutes.

Tips:

  • Use quality chocolate: The quality of the chocolate you use will greatly impact the taste of your Congo squares. Use a good-quality semisweet or bittersweet chocolate for the best results.
  • Don't overmix the batter: Overmixing the batter will make the Congo squares tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough before baking will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set: Do not overbake the cookies, or they will be dry and crumbly. Bake them just until a toothpick inserted into the center comes out with just a few moist crumbs attached.
  • Let the cookies cool completely before frosting: Allow the cookies to cool completely before frosting them. This will help the frosting to set properly.
  • Use your favorite frosting: You can use any type of frosting you like to top the Congo squares. Some popular options include chocolate frosting, vanilla frosting, or cream cheese frosting.
  • Decorate the cookies as desired: Once the frosting has set, you can decorate the cookies as desired. Some popular options include sprinkles, chopped nuts, or grated chocolate.

Conclusion:

Congo squares are a delicious and easy-to-make dessert that is perfect for any occasion. They are a great way to use up leftover chocolate, and they can be customized to your liking by using different types of frosting and decorations. So next time you are looking for a sweet treat, give Congo squares a try. You won't be disappointed!
