Number Of Ingredients 13

1 pound each dried navy beans, great northern beans, red kidney beans, pinto beans and green split peas
SEASONING MIX:
12 beef bouillon cubes
3/4 cup dried minced chives
4 teaspoons dried savory
2 teaspoons ground cumin
2 teaspoons coarsely ground pepper
4 bay leaves
ADDITIONAL INGREDIENTS FOR SOUP:
12 cups water, divided
1 can (14-1/2 ounces) stewed tomatoes, undrained
1-1/2 teaspoons salt
1/4 teaspoon hot pepper sauce, optional

Steps:

  • Combine beans and peas; place 3 cups in each of four large resealable plastic bags or glass jars. Set aside. , In each of four snack-size resealable plastic bags, place three bouillon cubes, 3 tablespoons chives, 1 teaspoon savory, 1/2 teaspoon cumin, 1/2 teaspoon pepper and one bay leaf. Seal bags. Yield: 4 batches., To prepare soup: Place contents of one bag of beans in a Dutch oven; add 7 cups water. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand for 1 hour. , Drain beans and discard liquid. Add remaining water and contents of one seasoning bag. Bring to a boil. Reduce heat; cover and simmer, stirring occasionally, until beans are tender, about 1 hour., Add tomatoes, salt and, if desired, pepper sauce. Simmer, uncovered, for 20 minutes. Discard bay leaf.

1/2 cup chopped onion (1 medium)
5 1/4 cups Progresso™ chicken broth (from two 32-oz cartons)
2 medium carrots, thinly sliced (1 cup)
1/2 teaspoon dried marjoram leaves
1/8 teaspoon pepper
2 boneless skinless chicken breasts, cut into 1/2-inch pieces
1 1/2 cups frozen corn, thawed, drained
1 cup frozen broccoli cuts, thawed, drained

Steps:

  • In 3- to 4-quart slow cooker, mix all ingredients except thawed vegetables.
  • Cover; cook on Low heat setting 8 to 9 hours.
  • About 5 minutes before serving, stir in thawed vegetables. Increase heat setting to High; cover and cook 5 minutes longer or until vegetables are crisp-tender.

Lentil soup is one of my favorites, but my husband has not been a fan in the past. This recipe added the ground beef, and beef flavoring and he thought that was a great improvement. This is great with a big skillet of buttermilk cornbread, and a side salad.

2 can(s) 14.5 oz diced tomatoes
12 oz tomato sauce
1 c onion, chopped
1 c carrot, diced
1 c celery, diced
2 clove garlic, minced
2 Tbsp butter
1 lb ground beef
15 1/2 oz package confetti lentils
1 tsp mrs. dash onion and herb seasoning
1 tsp mrs. dash southwest chipotle seasoning
6 c beef broth
6 c water
2 c orzo or ditalini, cooked

Steps:

  • 1. Use a 6 qt soup pot; melt the butter; add the onions, carrots, celery and garlic and cook for about 5 minutes, or til the onions are getting soft remove from the pot.
  • 2. Add beef to the same pot, and brown well. Drain fat from the pot and add vegetables back to the pot.
  • 3. Add the tomatoes, tomato sauce and the "beef flavor" package that comes in the lentils and the onion & herb and the Southwest Chipotle seasoning; stir in, and then simmer about 5 minutes.
  • 4. Add the lentils, water and beef broth; bring to a rolling boil; cover and simmer for 30 minutes. Add Salt & pepper, if needed, to taste; add the cooked orzo, stir and serve.

1 1/2 Tbsp canola oil
1 medium onion, diced
3 clove garlic, minced
1 medium red bell pepper, seeded and diced
1 medium yellow bell pepper
4 carrots, diced
3 ribs, celery, thinly sliced
1 medium jalepeno, seeded and diced (optional for a spicy soup)
1 Tbsp chili powder
1/2 tsp cumin
6 c low sodium chicken stock
4 can(s) black beans (15oz), drained and rinsed
salt and pepper
6 Tbsp low fat greek yogurt or sour cream
2 Tbsp chopped cilantro

Steps:

  • 1. Heat oil in a large pot over medium-high heat. Add onion, garlic, bell peppers, carrots and celery (add jalapeño if spicy soup is desired). Cook stirring occasionally, until softened, about 12 minutes. Add chili powder and cumin. Saute for another 3 minutes.
  • 2. Stir in stock and beans, bring to a boil. Reduce heat to low and simmer for 25 minutes, stir occasionally. Remove two cups of soup and puree in a blender or food processor. Stir puree back into pot and cook for 5 more minutes. Season with salt and pepper.
  • 3. Serve in bowls topped with a spoon of yogurt/sour cream and sprinkle of cilantro. *Don't like yogurt/sour cream? Add cheese instead.

1 cup diced carrots
1 cup diced rutabaga
1/2 cup chopped celery
1/2 cup fresh broccoli florets
1/2 cup fresh cauliflowerets
1/2 cup chopped onion
3 tablespoons water
3 tablespoons butter, optional
1 cup process cheese (Velveeta), cubed
1 cup frozen whole kernel corn
1/2 cup frozen peas
1/2 cup cubed fully cooked ham
5 cups milk
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon sugar

Steps:

  • In a microwave-safe 3-qt. baking dish, combine carrots, rutabaga, celery, broccoli, cauliflower, onion, water and butter if desired. Cover and microwave on high for 9 minutes or until vegetables are just tender, stirring three times during cooking. , Stir in cheese, corn, peas and ham; cover and let stand for 1 minute. Add milk, salt, pepper and sugar; cover and microwave on medium-high, stirring three times, for 5-7 minutes or until cheese is melted and soup is heated through (do not boil).
