3 ½ cups chopped poached chicken breast meat
½ cup diced celery
1 cup seedless green grapes, halved

⅓ cup mayonnaise

¼ teaspoon ground cumin
2 tablespoons rice vinegar
1 tablespoon white sugar

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium bowl, combine chicken, celery, grapes, cooked pasta, salt, and white pepper; mix well and reserve.

1/2 cup sliced almonds
1 package (5 ounces) spring mix salad greens
6 cups torn romaine
1 can (11 ounces) mandarin oranges, drained
2 celery ribs, thinly sliced
1 small red onion, chopped
2 green onions, thinly sliced
DRESSING:
3 tablespoons canola oil
2 tablespoons cider vinegar
5 teaspoons sugar
1 tablespoon minced fresh parsley
1/4 teaspoon salt

Steps:

  • In a small heavy skillet, cook and stir the sugar over medium-low heat until melted. Stir in almonds; cook for 1 minute or until lightly browned. It is a bit harder to layer in a bowl that is rounded but it looks great if you are having it on your table. I personally do not like head lettuce, so I use romaine, spring mix and sometimes add spinach to it.

1 head of lettuce with some spinach or romaine mixed in
1 c finely sliced celery
6 hard boiled eggs, chopped or sliced
1 pkg 10 oz. cooked peas, fresh or frozen
1/2 c chopped green pepper
8 green onions, sliced
6 oz water chestnuts, sliced thinly (canned, ok)
12 slice bacon, cooked & crumbled or equivalent in bacon bits (save 4 slices for top)
1 c mayonnaise
1 c sour cream
2 Tbsp white sugar
1 c cheddar cheese, grated

Steps:

  • 1. Cut or break lettuce into small pieces. Layer in bottom of 9 x 13 inch pan or large glass bowl. Scatter each layer in order given.
  • 2. Mix mayonnaise with sour cream and sugar. Spread over top being careful to seal right to the edge of pan or bowl.
  • 3. Scatter grated cheese over all followed by bacon bits. Seal well with plastic wrap. Store in refrigerator for at least 24 hours before serving. This keeps well a day or two.
  • 4. Garnish: To have greens on top sprinkle a few slices of green onion over all.

My Aunt Arlyne gave me this recipe. The first time I remember eating it was at a bridal shower she had for my sister Carol. It is a favorite with my family and friends.

3 c cooked chicken
1 1/2 c grapes, red or green
1 1/2 c chopped celery
1 can(s) pineapple chunks or tidbits, drained
1/2 tsp kosher salt
1 Tbsp freshly squeezed lemon juice
1/4 tsp ground white pepper
salad dressing (miracle whip) to coat

Steps:

  • 1. Mix all together and chill.
  • 2. Serve on a lettuce leaf or scooped out pineapple.
  • 3. I have added chopped pecans to this since I moved to Alabama and we have our own pecan trees. I like to toast the pecans in a little butter first.
  • 4. To use this as a sandwich filling, pulse the meat in the food processor until fine. Then add the other ingredients and do the same.

2 cups conchiglie (small seashell pasta shapes)
3 1/2 cups diced cooked chicken breasts, poached
1/2 cup diced celery
1/2 cup diced dried apricot
1/2 cup sultana raisin
salt
1/4 teaspoon white pepper
1/3 cup mayonnaise (use a good quality such as Hellmans, or do as I do and make your own)
1/2 teaspoon curry powder
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
2 tablespoons rice vinegar
1 tablespoon sugar
1/2 cup cashews, toasted and chopped

Steps:

  • Cook the pasta in a large pot of boiling salted water until al dente (about 8 to 10 minutes); drain
  • Run under cool water to chill and drain again
  • In a medium bowl, combine the chicken, celery, apricots, raisins, cooked pasta, salt and white pepper, mixing well
  • In another bowl, combine the mayonnaise, curry powder, cumin, coriander, rice vinegar and sugar; whisking ingredients together
  • Toss this dressing with the chicken mixture
  • Cover bowl and chill for at least 2 hours before serving
  • Serve on chilled plates, sprinkling with the toasted cashews

8 ounces mixed salad greens (field greens work best)
3/4 cup chopped walnuts
8 ounces gorgonzola, crumbled (Blue cheese may be substituted)
2 tart green apples, cored and diced
1 tablespoon fresh lemon juice
dried cranberries (to taste)
4 ounces bottles raspberry vinaigrette dressing

  • In a pan lightly toast walnuts.
