COMBINATION BURRITOS
Another one of my mother-in-law's recipes...she could and did make a burrito out of anything. This is just one of her quick recipes that she taught me to cook for his lunches when we were first married.

Steps:
- 1. In a large non-stick frying pan, break up the ground beef and add onion, garlic, Jalapeno pepper, coriander and cumin. Break up the ground beef with a wooden spoon and cook until it is no longer pink and the onions are beginning to get tender.
- 2. Add the refried beans and the water; stir and cook until well heated. Add 1 cup of the shredded cheese and heat until melted.
- 3. Tear off a piece of wax paper of aluminum foil and lay 1 tortilla in the middle. Spoon 2 tablespoonfuls of meat mixture down the center of the tortilla. Sprinkle some more cheese on the meat. Fold one side of the tortilla over the meat and pull it tight against the meat; fold each end up towards the middle and continue rolling into a burrito. Wrap the tortilla in the wax paper or foil and place seam down in a warm, covered pan.
- 4. These are great served with Spanish rice corn chips and pica de gallo (see my Pica de Gallo recipe on this site).

Steps:
- Add ground beef to a large skillet over high heat and sprinkle with taco seasoning. Cook, breaking up the meat, until browned. Drain the fat and set aside to cool.
- Assemble the burritos by microwaving the flour tortilla for 20 seconds, and begin to layer burrito starting with refried beans, followed by the cooked beef and cheese.
- Fold in the left and right sides of the tortilla and roll it up from the bottom, tucking the bottom edge under the filling. Wrap in parchment paper and label. Freeze up to 1 month.
- To reheat from frozen, wrap the burrito in a damp paper towel and microwave for 2-3 minutes, flipping halfway or until the center is hot. Let stand 1 minute before eating.

Tips:
- Prep your ingredients beforehand. This will make assembling the burritos much easier. Diced or shredded ingredients are best. Consider pre-cooking any meats.
- Use a large tortilla. A large burrito tortilla allows you to fit more fillings inside without the burrito falling apart or becoming difficult to fold.
- Don't go overboard with rice. While rice is a classic burrito filling, it can easily overwhelm the other ingredients. Use a small amount of rice or leave it out altogether.
- Layer your fillings evenly. This will ensure that each bite of your burrito has a good balance of flavors and textures.
- Don't overstuff your burrito. An overstuffed burrito is difficult to fold and eat. It's better to have two smaller burritos than one giant one.
- Use different types of beans. Mixing two or three different types of beans adds a variety of flavors and textures to your burritos. Try using black beans, pinto beans, and kidney beans.
- Get creative with your toppings. Salsa, guacamole, sour cream, cheese, cilantro, and chopped onions are all classic burrito toppings. But don't be afraid to experiment with other toppings, such as pickled vegetables, diced fruit, or crumbled tofu.
