2 medium-size sweet onions, finely chopped
¾ pound smoked ham, chopped
6 garlic cloves, finely chopped

⅓ cup apple cider vinegar
1 tablespoon sugar

Steps:

  • Cook bacon over medium heat in a 10-qt. stockpot for 10 to 12 minutes or until almost crisp.
  • Add onion to stockpot, and sauté 8 minutes. Add garlic and ham, and sauté 1 minute. Stir in broth, collard greens, apple cider vinegar, sugar, salt, and pepper. Reduce heat to medium-low, and cook 2 hours or until desired degree of tenderness.

1 small head cabbage, roughly chopped
Chicken stock, as needed
1 butternut squash, split lengthwise and seeds scooped out
Grapeseed oil, for drizzling
Salt and freshly ground black pepper
1 1/2 pounds potatoes, peeled and quartered
1 egg
Butter, for frying cakes
1 tablespoon minced fresh parsley
1 teaspoon salt
1/2 teaspoon white pepper
Juice of 1 lemon
Juice of 1 lime
Four 4-ounce flank steaks or bison steaks
1 teaspoon grapeseed oil
1 teaspoon Sriracha
1 tablespoon vinegar
4 eggs

Steps:

  • For the bubble and squeak: Preheat the oven to 350 degrees F.
  • Add the cabbage to a pan, cover with chicken stock and bring to a boil. Lower the heat and simmer until tender, about 1 hour.
  • Drizzle the squash halves with the oil, sprinkle with salt and pepper and put on a baking sheet cut-side up. Roast until tender, 45 to 60 minutes. Set aside to cool.
  • Put the potatoes in a pot and add enough salted water to cover. Cover the pot, bring to a boil, lower the heat and simmer until tender, 20 to 25 minutes. Drain the potatoes and mash with a fork or potato masher.
  • For the steaks: In a bowl, mix together the parsley, salt, pepper and lemon and lime juice. In a shallow bowl, cover the steaks with the sauce and marinate for 30 minutes.
  • Measure out 2 cups of the mashed potatoes, 1 cup of the cooked cabbage and 1 cup of the roasted squash into a large bowl (save the remaining vegetables for another use). Add the egg and some salt and pepper and mix well. Form into four equal cakes, each about 1 inch thick.
  • To cook the cakes, heat a saute pan over medium-high heat. Add some butter and then the cakes and cook until golden brown on one side. Flip and cook on the second side until golden brown. Keep warm.
  • For the poached eggs: Heat 8 cups water and the vinegar in a pot until simmering. Carefully crack the eggs into the water and cook for 3 minutes. Remove the eggs with a slotted spoon and place on a plate or into soup cups until plating.
  • To cook the steaks, heat a thick-bottom pan over high heat until smoking. Remove the steaks from the marinade. Reduce the heat to medium, add the oil and steaks and cook for 3 minutes on each side. Set the steaks aside on a plate to rest for 2 minutes. Add the Sriracha to the pan and stir to create a pan sauce. Slice the steaks on the bias.
  • Place a bubble and squeak cake on each plate followed by some sliced steak. Top with a poached egg and finish with the pan sauce.

1/2 cup onion, finely chopped
1 pound mashed potatoes, about 2 cups
1 cup leftover vegetables (e.g., cabbage, kale, peas, cooked swede, cooked carrots, and/or cooked Brussels sprouts), finely chopped
Optional: bacon, leftover roast, bangers, and/or ham, chopped
Salt, to taste
Freshly ground black pepper, to taste
Optional: fried or poached eggs, for serving

Steps:

  • Gather the ingredients.
  • In a large frying pan, melt the butter over medium heat and make sure it doesn't brown. Add the finely chopped onion and fry gently for about 3 minutes or until soft and translucent.

When braised with smoked meat, they're equally delicious as a side or a light one-pot meal. The longer the greens cook, the better they'll be. Top them with a generous dash or two of hot sauce, and pair with cornbread. What tomato soup is to grilled cheese, potlikker is to cornbread.

3 pounds collard greens (from about 6 medium bunches), or 2 pounds pre-chopped collard greens
2 tablespoons extra-virgin olive oil
1 Vidalia, Spanish or yellow onion, finely chopped (about 1 cup)
Pinch of kosher salt, plus more as needed
1 pound smoked turkey (any combination of necks, legs, butt or wings) or pork neck bones
2 (1/2-inch) chicken bouillon cubes
1 tablespoon garlic powder
1 tablespoon onion powder, plus more as needed
2 teaspoons apple cider vinegar, plus more as needed
1 teaspoon black pepper, plus more as needed
1/2 teaspoon red-pepper flakes
Granulated sugar, to taste

Steps:

  • Tear the greens from their stems. Take a handful of greens, roll them up lengthwise and slice them into bite-size pieces. Add the sliced greens to an empty, clean sink full of cool water and wash them, removing all grit, sand and debris. Drain sink and rinse greens thoroughly with cold water until water becomes clear.
  • Heat the olive oil in a large stock pot or Dutch oven over medium. Add the onion and a pinch of salt, and sauté, stirring occasionally, until onion is translucent, about 5 minutes.
  • Add 4 cups of water to the pot. (This will become your potlikker.) Turn the heat to medium-high. Add the cleaned greens by the handful, stirring them until wilted before adding more.
  • Add the smoked turkey, bouillon cubes, garlic and onion powders, apple cider vinegar, black pepper and red-pepper flakes to the pot. Bring to a rolling boil, then cover and lower heat to medium-low. Cook until greens are completely tender, at least 2 hours. Most of the water should have evaporated by this point, with just enough left to cover the bottom of the pot, and the meat should pull away from the bones.
  • Take the meat out of the pot, transfer to a cutting board, and shred the meat with two forks. Add the shredded meat back to the pot and stir until well combined. Taste and adjust salt, pepper and onion powder as needed. To cut bitterness, add sugar; if you'd like more tang, add more vinegar. Serve hot.
