COLD MACARONI AND TUNA SALAD

Cold Macaroni and Tuna Salad image

This is a simple and good recipe that is great served on those hot summer days and can even be prepared the night before so that it is ready and cold when you come home from work the next day. My husband never ate this until we got married and in the summer he requests it every other week. You can substitute chicken for the tuna and it is great that way also. I serve it on a leaf of lettuce, for looks, with an assortment of crackers. Happy eating!

COLD TUNA & SHELLS SALAD

Cold Tuna & Shells Salad image

Tuna noodle salad! It's pretty simple easy and straight forward. Great for the summer, pot lucks, a complete meal or a side.I've been making this for about ten years it was one of my girlfriends recipes but every time she see me she wants me to make it. she says she can't do it right anymore so she passed it down to me. you can use any mayo you like, (I recommend Miracle Whip because it just doesn't taste right to me with other mayos).

Categories     One Dish Meal

Time 40m

Yield 8-10 serving(s)

Number Of Ingredients 6

4 (8 ounce) tuna (I use about 4 or 5 8oz. cans)
1 (8 ounce) package sharp cheddar cheese
1 1/2 cups Miracle Whip
3 tablespoons pickle relish (based on pref.)
1 (1 lb) pasta noodles (I use small shells)
1 -2 tablespoon paprika (for color)

Steps:

  • Cook the the pasta noodles, drain and set in the fridge to chill. Don't worry about them sticking together they'll separate once you start mixing (spread them out on a cook sheet for less sticking and for a quick chill put them in the freezer for about 10 minutes).
  • Cut up the cheese into bite size pieces and set a side.
  • Drain the tuna and set aside.
  • In a large (about 4-qt) bowl divide the pasta in half and mix in 1/2 the tuna, cheese, mayo and pickle relish.
  • After it's well mixed add the rest of the ingredients leaving out the paprika.
  • Once everything is mixed well add the paprika (it's just for color).
  • Depending on your taste you might want to add more mayo, paprika, or pickle relish.
  • I usually add more mayo the next day. Chill for 10-20 minutes in the fridge and serve.

REFRESHING SUMMER COLD TUNA MACARONI SALAD

Refreshing Summer Cold Tuna Macaroni Salad image

This is my family's go to meal during the summer. I make a huge batch of it and we all eat it around the pool all Memorial weekend. I've used Cavatappi pasta instead of elbow macaroni this time so that the cute curly Cavatappi's ridges can grab more tuna. Enjoy!

Provided by Deni Elwood

Categories     Salads

Time 1h10m

Number Of Ingredients 5

1 box 1 lb macaroni, elbow or cavatappi pasta
2 can(s) 12 oz water packed tuna
1 jar(s) 14 oz sweet pickle relish
1 jar(s) 15 oz. miracle whip
salt & pepper to taste

Steps:

  • 1. Bring pot of salted water to a rapid boil. Add pasta to boiling water. Stir and let boil for 8-10 minutes. Remove Pasta from pot, drain well then rinse while in colander with cold water from your tap. After pasta is completely cooled, drain well and pour into large bowl.
  • 2. While pasta is boiling, rough chop a large sweet onion.
  • 3. Empty the contents of the sweet relish into bowl with pasta and stir. Add the chopped onion and mix into pasta mixture.
  • 4. Open both cans of tuna and drain well. Empty the cans of tuna, breaking up the tuna as you do. Mix well into pasta mixture. Add the jar of Miracle Whip and mix completely with pasta, relish and onion.
  • 5. Refrigerate the pasta salad until very cool. Before serving, stir again and add salt and pepper to taste. I like to use sea salt for the taste.
  • 6. Hint: Sometimes the salad becomes dry (due to the pasta absorbing the liquid), so before serving if it is a little dry, add a small amount of milk to the pasta salad and mix well.

COLD TUNA SALAD WITH PASTA

Cold Tuna Salad with Pasta image

I love both tuna and pasta. While working for Weight Watchers I created this recipe for my members. It was greeted with rave reviews!

Provided by Linda Stevens

Categories     Tuna Salads

Time 25m

Number Of Ingredients 7

2 oz whole grain pasta shells
2 can(s) tuna, packed in water, drained
1 Tbsp onion flakes, dehydrated
1 1/3 c peas, frozen
1/4 tsp black pepper
1/2 c light mayonnaise
1/2 c cheese, shredded, fat free

Steps:

  • 1. Boil pasta and rinse in cold water.
  • 2. Drain cans of tuna and place in bowl with lid.
  • 3. Combine the two: pasta and tuna.
  • 4. Re-hydrate minced onion flakes with 2 T. warm water.
  • 5. While onion is re-hydrating, place frozen peas in a microwave safe bowl with 1/3 c. water. Cover and microwave for 3 minutes. Rinse peas in cold water and add to pasta and tuna mixture.
  • 6. Add the shredded cheese.
  • 7. Strain any excess liquid off the onion and add along with the black pepper to mixture.
  • 8. Add mayonnaise last and stir thoroughly. Cover and let chill in refrigerator. Makes 5 generous 1/2 cup servings.
  • 9. I will usually scoop a 1/2 cup onto a large lettuce leaf, but it is also good served with crackers.

Tips:

  • For the best flavor, use fresh, high-quality tuna. If you're using canned tuna, be sure to drain it well and flake it into small pieces.
  • Use a variety of mayonnaise and yogurt to add flavor and creaminess to the salad. You can also use a combination of the two.
  • Add your favorite vegetables to the salad for a healthy and crunchy twist. Some good options include celery, onion, cucumber, and tomatoes.
  • Season the salad with salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of Dijon mustard for extra flavor.
  • Chill the salad for at least 30 minutes before serving to allow the flavors to meld. You can also make the salad ahead of time and store it in the refrigerator for up to 3 days.

Conclusion:

Cold tuna salad is a classic summertime dish that is both delicious and easy to make. It's a great option for a quick lunch or dinner, and it's also perfect for picnics and potlucks. With so many different variations, there's sure to be a tuna salad recipe that everyone will enjoy.
