This great little drop cookie is from Household Searchlight cookbook, and a recipe that I grew up making...it was the first recipe I was ever given free reign of the kitchen with...they are great with cold milk or a cup of hot coffee or cocoa.

Number Of Ingredients 13

1 cup sugar
1/2 cup shortening
1 egg
1/2 teaspoon baking soda
1/2 cup nuts
1 teaspoon clove
3/4 cup coffee
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup raisins
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 cups flour

Steps:

  • Cream shortening and sugar.
  • Add beaten egg.
  • Mix thoroughly.
  • Sift Flour, measure and sift with baking soda, salt, baking powder and spices.
  • Add Alternately with coffee to shortening/sugar mixture.
  • Add raisins, nuts and flavoring.
  • Mix thoroughly.
  • Add additional flour if necessary to make a drop cookie dough.
  • Drop by teaspoonfuls onto well oiled baking sheet.
  • Make in moderate oven (400 degrees F.) about 15 minutes -- 36 servings.

1 c shortening
2 c brown sugar
2 eggs
1/2 c cold coffee
1 tsp baking soda
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
3 1/2 to 4 c flour

  • 1. Mix ingredients together until smooth.
  • 2. Drop by teaspoon on greased cookie sheet.
  • 3. Bake at 350 degrees for 8-10 minutes.

1 1/4 cups light brown sugar, packed
3/4 cup shortening -- butter flavored
2 tablespoons brewed coffee -- cold
1 teaspoon vanilla extract
1 egg
1 3/4 cups all-purpose flour
1 tablespoon French roast coffee beans finely ground or espresso coffee beans
1 teaspoon salt
3/4 teaspoon baking soda
1 1/2 cups semisweet chocolate chips
1/2 cup milk chocolate chips
1/2 cup walnuts -- coarsely chopped
36 chocolate kisses -- unwrapped

Steps:

  • Preheat oven to 375 degrees; place sheets of foil on countertop for cooling cookies. Place the brown sugar, shortening, coffee and vanilla extract in a large bowl. Beat on medium speed of an electric mixer until blended. Add the egg; beat well. Combine the flour, ground coffee, salt and baking soda. Add to the shortening mixture; beat on low speed just until blended. Stir in the chocolate chips and walnuts. Drop the dough by rounded measuring tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake one baking sheet at a time for 8 to 10 minutes, or until the cookies are lightly browned and just set. Do no overbake. Place one chocolate kiss candy in the center of each cookie. Cool for 2 minutes on the baking sheet. Remove the cookies to the foil to cool completely.
