COCONUT SHRIMP CURRY WITH MUSHROOMS

Coconut Shrimp Curry With Mushrooms image

This simple curry, infused with spices, has a pleasant flavor with a hint of coconut. Use whatever kind of cultivated mushrooms you can find, from button-type white ones to golden oyster mushrooms. Feel free, too, to skip the curry leaves, but if you can find them, they add a nice depth of flavor.

Tips:

  • For the best results, use fresh shrimp that are peeled and deveined. If using frozen shrimp, thaw them completely before cooking.
  • To make the coconut milk sauce, use full-fat coconut milk for a richer flavor. You can also use light coconut milk, but the sauce will be thinner.
  • Be careful not to overcook the shrimp. They should be cooked through, but still slightly pink in the center.
  • Serve the coconut shrimp stir-fry immediately over rice or noodles. You can also serve it with a side of vegetables.
  • Garnish the dish with fresh cilantro or chopped peanuts for extra flavor.
  • If you don't have coconut milk, you can use a mixture of heavy cream and chicken broth. The sauce will not be as rich, but it will still be delicious.

Conclusion:

Coconut shrimp stir-fry is a quick and easy dish that is perfect for a weeknight meal. It is also a great way to use up leftover shrimp. The combination of sweet and savory flavors in the sauce is sure to please everyone at the table. Serve it over rice or noodles, and enjoy!
