- Sprinkle half the toasted coconut in an 8 by 12-inch nonmetal pan. Pour in the marshmallow batter and smooth the top of the mixture with damp hands. Sprinkle on the remaining toasted coconut. Allow to dry uncovered at room temperature overnight.
- Remove the marshmallows from the pan and cut into squares. Roll the sides of each piece carefully in confectioners' sugar. Store uncovered at room temperature.
- Combine the gelatin and 1/2 cup of cold water in the bowl of an electric mixer fitted with the whisk attachment and allow to sit while you make the syrup.
- Meanwhile, combine the sugar, corn syrup, salt, and 1/2 cup water in a small saucepan and cook over medium heat until the sugar dissolves. Raise the heat to high and cook until the syrup reaches 240 degrees F on a candy thermometer. Remove from the heat.
- With the mixer on low speed, slowly pour the sugar syrup into the dissolved gelatin. Put the mixer on high speed and whip until the mixture is very thick, about 15 minutes. Add the vanilla and mix thoroughly.
HOMEMADE COCONUT MARSHMALLOWS
This is my favorite time of year to make old-fashioned treats. And while there are so many wonderful traditional Christmas cookies, I like to make something no one is expecting: my homemade coconut marshmallows. Grocery-store marshmallows are fine for toasting s'mores, but once you've tasted a homemade marshmallow, you'll never go back to store-bought. And you won't believe how easy they are to make! All I do is put a mixture of gelatin and water in an electric mixer fitted with the whisk attachment and slowly mix in sugar syrup and flavorings. Then I pour the mixture into a pan, let the marshmallows set on the counter overnight and cut them into squares in the morning. These, made with pure vanilla extract and toasted coconut, are my favorite; they're lighter than air and they just melt in your mouth. I'm thinking Santa might even be delighted to find these waiting when he comes down the chimney-unless the kids eat them first!

- Heat oven to 190C/fan 170C/gas 5. Beat butter, sugar, egg and vanilla together with a pinch of salt until smooth. Fold in the flour and coconut to form a dough.
- On a floured surface, shape the dough into a round, then roll to the thickness of a £1 coin. Cut into rounds using a 6cm cutter. Lift onto baking sheets, then bake for 14 mins until light golden. Cool for a few mins, then transfer to a cooling rack.
- To sandwich the biscuits, lay half out on a baking sheet, under-side up. Put ½ tsp jam onto each one, top with a piece of marshmallow, then bake for 2½ mins or until just melted. Remove from oven, then quickly top with the other biscuits, pressing down so that the marshmallow sticks them together and just oozes out. Cool for 10 mins. Put the coconut and remaining jam onto plates, dip the edges in the jam, then roll in the coconut. Will keep in an airtight tin for up to 3 days.

- Mix cold water and gelatin together in a bowl until gelatin is dissolved.
- Bring 3/4 cup water to a boil in a saucepan; add sugar and bring back to a boil. Pour sugar mixture over gelatin mixture; add vanilla extract and salt. Beat with an electric mixer until fluffy, about 20 minutes.

- Crush biscuits.
- Half cherries and put into mixture.
- Half marshmallows if using big ones, or just put mini marshmallows into mixture.
- (i use 1/2 a bag, no need to measure).
- Pour in condensed milk.
- Mix together.
- Place a large piece of greaseproof paper out flat and cover with the coconut.
- Place mixture into a log shape onto the paper and roll in the coconut. Add more if needed.
- Roll up in paper tight to keep log shape.
- Place this into a fridge to set for a couple of hours.
- Can be eaten straight from the fridge or is less heavy if left out before eating.
- I sometimes add a tablespoon of toffee sauce into the mix.
- Try it, it's just so easy.
- Enjoy.

- Crush the digestive biscuits in a food processor or in a plastic bag with a rolling pin, then put them in a large mixing bowl. Chop each marshmallow into 4 pieces and add to the bowl with the cherries and 175ml condensed milk. Mix until the ingredients are well combined and you have a sticky mixture. If it's too dry, add a splash more condensed milk.
- Sprinkle most of the coconut over a large piece of cling film (or foil). Tip the mixture onto the coconut and shape into a long sausage, about 30 x 5cm. Sprinkle more coconut over the top of it and wrap the cling film tightly around, twisting the ends together. Leave in the fridge to chill for 4-6 hrs, then cut into 15 slices and serve.
