Steps:
- Using a wooden spoon, mix together the condensed milk and icing sugar in a large bowl. It will get very stiff. Work the coconut into the mix until it's well combined - use your hands, if you like.
- Split the mix into two and knead a very small amount of food colouring into one half. Dust a board with icing sugar, then shape each half into a smooth rectangle and place one on top of the other. Roll with a rolling pin, re-shaping with your hands every couple of rolls, until you have a rectangle of two-tone coconut ice about 3cm thick.
- Transfer to a plate or board and leave uncovered for at least 3 hrs or ideally overnight to set. Cut into squares with a sharp knife and pack into bags or boxes. These will keep for up to a month at least, if stored in an airtight container.

COCONUT SLICE
This can also be made as a chocolate coconut slice. One for the lunchbox or with a nice cup of tea or coffee. Ice/frost with your favourite lemon icing for plain version or chocolate icing/frosting for the chocolate variation.

Yield 16-20 bars or squares

Steps:
- Sift together the self raising flour and salt (and cocoa if using) into a bowl.
- Add the sugar, coconut, and melted butter.
- Mix well.
- Stir in the beaten eggs and milk (and vanilla if using).
- Spread mixture into a slice tin and bake in a moderate oven 350'F/180'C for 25-30 minutes.
- When cold ice/frost with either lemon or chocolate icing/frosting.
- Sprinkle some extra coconut over top of icing/frosting if liked.
- Cut into bars or squares.
Tips:
- Use a food processor to finely grate the coconut. This will help to ensure that the coconut is evenly distributed throughout the slice and will prevent it from becoming too dry.
- If you don't have a food processor, you can grate the coconut by hand using a box grater. Just be sure to grate it finely so that it blends well with the other ingredients.
- Use fresh coconut milk for the best flavor. Canned coconut milk can be used in a pinch, but it won't have the same rich flavor as fresh coconut milk.
- Don't overmix the batter. Overmixing will make the slice tough.
- Bake the slice until it is golden brown around the edges and a toothpick inserted into the center comes out clean.
- Let the slice cool completely before cutting it. This will help to prevent it from crumbling.
Conclusion:
Coconut ice slice is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be customized to your liking. Whether you like it plain or with added toppings, coconut ice slice is sure to be a hit with everyone who tries it.
