COCONUT CURRY CHICKEN NOODLE SOUP

Coconut Curry Chicken Noodle Soup image

This sweet, spicy and fragrant chicken soup, called curry mee, is a happy contrast of hot broth, springy noodles and a madness of garnishes. Coconut milk has a particular weighty creaminess, called lemak, that can make some curries and soups too rich. Here, a combination of coconut milk and half-and-half is used to balance the broth.

THAI COCONUT CHICKEN CURRY SOUP

Thai Coconut Chicken Curry Soup image

Chicken soup soothes the soul (not a scientific fact yet, but it may as well be). In this Thai version, we infuse the broth with coconut milk, fragrant curry paste, fresh ginger, and cilantro to wake up the senses. If you're looking to clear congestion, add a few slices of fresh jalapeno to the stock mixture while it simmers. Remember to saute the chicken just until no longer pink, otherwise the pieces may become tough in the finished soup.

THAI-INSPIRED COCONUT CURRY SOUP WITH VEGETABLES

Thai-Inspired Coconut Curry Soup With Vegetables image

There are dozens of types of curries in Thailand, but most can be categorized as red, green or yellow; this is a streamlined vegetarian version of a red curry, named after the color of chile found in the curry paste. This one is spicy, sweet, creamy and adaptable. When the red curry paste is cooked in oil, the blend of chiles and aromatics like galangal and lemongrass come alive and become the curry's backbone. Because store-bought pastes vary in intensity, this recipe also uses fresh garlic and ginger to ensure a zingy final result. Use any vegetables you like, but it's nice to have one hearty vegetable (like sweet potato) and one crisp one (like snow peas) for a mix of textures. If you find your curry too spicy, stir in a bit of brown sugar. If it's feeling a bit flat, squeeze in a little lime juice or add a dash of soy or fish sauce.

SPICY LENTIL-COCONUT CURRY/SOUP

Spicy Lentil-Coconut Curry/Soup image

This is a modification of a soup recipe I learned in a vegan cooking class. I've tinkered with it quite a bit over the years, and it's quite different from the original now. It can be made as a curry or a soup, depending on the amount of liquid used. When I make it as a curry, I often double this recipe and serve it over recipe #284073. Use onion if you can't find fennel, or to ramp up the spiciness. To prepare fennel bulbs, cut off stalks and strip outer layer off bulb before chopping. Freezes well.

CHICKEN COCONUT CURRY SOUP - A.K.A. EASY MULLIGATAWNY!

Chicken Coconut Curry Soup - A.k.a. Easy Mulligatawny! image

This is my absolute favorite soup of all time. I've made it for friends and family from Europe to the Caribbean, haven't met anyone who could pass it up! This recipe is based on a soup I tried at an Indian restaurant in Montreal about 5 years back. It was soooo delicious and creamy. I have no idea how they made theirs, but my take is really, really close and super easy.

Provided by MTLcook

Categories     Chicken Breast

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 13

1 whole boneless skinless chicken breast, and cut into 1 inch cubes
3 cups potatoes, peeled and diced (about 5 medium sized potatoes)
2 cups carrots, peeled and diced (about 2 large or 3 medium carrots)
1 cup onion, peeled and diced (about 1 large onion)
3 tablespoons curry powder
2 tablespoons freshly grated gingerroot
2 tablespoons freshly grated garlic
1 teaspoon ground cumin
2 chicken stock cubes
2 liters water
1 (15 ounce) can coconut milk
1 teaspoon salt (adjust according to taste)
1/2 teaspoon fresh ground pepper (adjust according to taste)

Steps:

  • In a large pot add water, chicken stock cubes, salt pepper. Bring to a boil.
  • Add chicken, reduce to medium heat. Let simmer about 10 minutes.
  • Add potatoes, carrots, onions. Let simmer about 20 minutes.
  • Add curry powder, ginger, garlic, salt & pepper. Reduce to low heat. Let simmer about 10 minutes.
  • Once the potatoes are fully tender, remove from heat and add coconut milk.
  • Puree with hand blender.
  • Serve with Basmati rice and enjoy!
  • *** Notes: 1. Try not to substitute the fresh ginger or garlic for powdered or paste. This will really alter the overall taste (and not in a good way.). 2. Shake the can of coconut milk before using. Most of the coconut flavor is in the bits that settle at the bottom of the can. 3. You can add chilli powder to make this spicier. It really depends on how hot the curry powder you use is. I usually use a blend of very hot Madras curry powder and very mild Caribbean curry powder.

RED CURRY COCONUT SQUASH SOUP

Red Curry Coconut Squash Soup image

This curried squash soup has such an amazing balance of flavors and has officially become my favorite soup. Perfect for a chilly fall day! The fall weather always serves as inspiration for soup, especially butternut squash soups. I really wanted to put a spin on the typical squash soup this time, though. Optional garnishes include sliced scallions, toasted squash seeds, or shrimp. I highly suggest the toasted squash seeds as a garnish. They really add a lot!

Time 1h10m

Yield 6

Number Of Ingredients 10

1 medium butternut squash
2 tablespoons butter, or more as needed
1 tablespoon coconut oil
½ onion, chopped
2 roasted red peppers, drained and sliced
2 tablespoons red curry paste
1 tablespoon freshly grated ginger
3 cloves garlic, minced
1 (14 ounce) can coconut milk (such as Thai Kitchen®)
½ cup skim milk

Steps:

  • Peel butternut squash. Cut in half lengthwise and scoop out seeds. Cut flesh into cubes.
  • Melt 2 tablespoons butter and coconut oil in a soup pot over medium-high heat. Add onion and cook until translucent, about 3 minutes. Add squash, red peppers, red curry paste, ginger, and garlic. Mix thoroughly and cook for 5 to 7 minutes. Add extra butter if the pot dries out, to avoid burning onion or squash.
  • Pour coconut milk and skim milk into the pot; bring to a boil. Reduce heat and simmer soup, stirring often, until squash is soft, about 25 minutes.
  • Pour 1/3 of the soup into a blender. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend. Pour into a large bowl. Repeat twice more.

This is the tastiest soup I have ever eaten in my life. iTs really sophisticated and unusual. I got the recipe from The BestSoups cookbook. Honestly its delicious, but dont be tempted to increase the curry paste as it spoils the delicate flavour.

Yield 12 serving(s)

Number Of Ingredients 26

2 tablespoons coconut oil
6 garlic cloves, minced
1 onion, diced
3 carrots, sliced
3 celery ribs, sliced
1 head cauliflower, chopped into small pieces
1 potato, diced into 1/2 inch cubes
1 bunch kale, chopped into small pieces
2 tablespoons curry powder
1 tablespoon garam masala
2 teaspoons cumin
1 teaspoon turmeric
1 teaspoon coriander
2 teaspoons chili powder, hot
3 cups red lentils, rinsed
8 cups water
3 tablespoons vegetable bouillon
3 tablespoons tomato paste
diced tomato
1 (16 ounce) can coconut milk
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon celery powder
1 tablespoon salt
1/2 teaspoon pepper
lime wedges or lemon wedge, to garnish

Steps:

  • Heat coconut oil in a heavy-bottomed large soup pot on medium until a drop of water sizzles in it; be careful not to let the oil smoke.
  • Add garlic and saute for 1 min, stirring.
  • Continue to stir fairly frequently as you add more veggies, and keep the lid on in between stirring. Add onion and saute 5 minute Add carrots and celery and saute another 5 minute Add the cauliflower, potato and kale, and saute another 5 minute
  • Add the curry, garam masala, cumin, turmeric, coriander, and chili powder and stir. Let saute a few more minutes, and then add everything else. (NOTE: if you prefer, you can use more bouillon instead of the granulated garlic, granulated onion and celery powder.).
  • Bring to a boil uncovered, stirring occasionally, and then reduce to medium low and partially cover.
  • Stir occasionally and test lentils after about 25 minutes. Continue cooking until they are soft. If you find the broth needs more flavor, add more bouillon or more of the curry seasonings.
  • Serve with lemon or lime wedges to squeeze into the soup.

Tips for Making Coconut Curry Soup:

  • Use fresh coconut milk for the best flavor. Canned coconut milk can be used, but it will not be as flavorful.
  • If you don't have curry paste, you can make your own by blending together 1 tablespoon of coriander seeds, 1 tablespoon of cumin seeds, 1 tablespoon of turmeric powder, 1 tablespoon of ginger, and 1 tablespoon of garlic.
  • Add vegetables to the soup based on your preference. Some good options include carrots, potatoes, bell peppers, and spinach.
  • If you want a thicker soup, add 1 tablespoon of cornstarch or flour to the soup before simmering.
  • Serve the soup with rice, naan bread, or your favorite side dish.

Conclusion:

Coconut curry soup is a delicious and easy-to-make dish that is perfect for a quick and healthy meal. With its creamy texture and flavorful broth, this soup is sure to please everyone at the table. You can use your creativity and explore your cooking to modify it with different ingredients that fit your taste and preference.
