Chicken Curry Soup with Coconut and Lime image

Chicken Curry Soup recipe with Coconut and Lime. Here, lime juice replaces the traditional lemongrass, which can be hard to find. The result is a quick, authentic-tasting Thai-style soup. COCONUT CURRY CHICKEN NOODLE SOUP

Coconut Curry Chicken Noodle Soup image

This sweet, spicy and fragrant chicken soup, called curry mee, is a happy contrast of hot broth, springy noodles and a madness of garnishes. Coconut milk has a particular weighty creaminess, called lemak, that can make some curries and soups too rich. Here, a combination of coconut milk and half-and-half is used to balance the broth.

THAI COCONUT CHICKEN CURRY SOUP

Thai Coconut Chicken Curry Soup image

Chicken soup soothes the soul (not a scientific fact yet, but it may as well be). In this Thai version, we infuse the broth with coconut milk, fragrant curry paste, fresh ginger, and cilantro to wake up the senses. If you're looking to clear congestion, add a few slices of fresh jalapeno to the stock mixture while it simmers. Remember to saute the chicken just until no longer pink, otherwise the pieces may become tough in the finished soup.

CHICKEN COCONUT CURRY SOUP - A.K.A. EASY MULLIGATAWNY!

Chicken Coconut Curry Soup - A.k.a. Easy Mulligatawny! image

This is my absolute favorite soup of all time. I've made it for friends and family from Europe to the Caribbean, haven't met anyone who could pass it up! This recipe is based on a soup I tried at an Indian restaurant in Montreal about 5 years back. It was soooo delicious and creamy. I have no idea how they made theirs, but my take is really, really close and super easy.

Categories     Chicken Breast

Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 13

1 whole boneless skinless chicken breast, and cut into 1 inch cubes
3 cups potatoes, peeled and diced (about 5 medium sized potatoes)
2 cups carrots, peeled and diced (about 2 large or 3 medium carrots)
1 cup onion, peeled and diced (about 1 large onion)
3 tablespoons curry powder
2 tablespoons freshly grated gingerroot
2 tablespoons freshly grated garlic
1 teaspoon ground cumin
2 chicken stock cubes
2 liters water
1 (15 ounce) can coconut milk
1 teaspoon salt (adjust according to taste)
1/2 teaspoon fresh ground pepper (adjust according to taste)

Steps:

  • In a large pot add water, chicken stock cubes, salt pepper. Bring to a boil.
  • Add chicken, reduce to medium heat. Let simmer about 10 minutes.
  • Add potatoes, carrots, onions. Let simmer about 20 minutes.
  • Add curry powder, ginger, garlic, salt & pepper. Reduce to low heat. Let simmer about 10 minutes.
  • Once the potatoes are fully tender, remove from heat and add coconut milk.
  • Puree with hand blender.
  • Serve with Basmati rice and enjoy!
  • *** Notes: 1. Try not to substitute the fresh ginger or garlic for powdered or paste. This will really alter the overall taste (and not in a good way.). 2. Shake the can of coconut milk before using. Most of the coconut flavor is in the bits that settle at the bottom of the can. 3. You can add chilli powder to make this spicier. It really depends on how hot the curry powder you use is. I usually use a blend of very hot Madras curry powder and very mild Caribbean curry powder.

COCONUT CURRY CHICKEN NOODLE SOUP

Coconut Curry Chicken Noodle Soup image

Spicy coconut broth mixed with noodles and leftover chicken (I like to use rotisserie chicken) is topped with cilantro, red onions, and a squeeze of lime juice. It will be a lot of noodles to broth (it's like a combo of stew and soup) so add less noodles if you want it to be more soupy.

COCONUT CURRY CHICKEN SOUP

COCONUT CURRY CHICKEN SOUP image

Categories     Chicken

Yield 4 people

Number Of Ingredients 16

2 14 ounce cans coconut milk
1.5 heaping Tablespoon Thai red curry paste (I like Blue Dragon)
1 bunch cilantro roots; rinsed well
3-4 chicken thighs sliced
2 cups chicken broth
2 carrot, shredded
2 stalks lemon grass; halved lengthwise, woody leaves removed
2 tablespoons fish sauce
2 limes zest and juice
a small knob ginger; cut in a few slices
a handful bean sprouts
1 8 ounce package vermicelli
2 garlic cloves finely diced
1/2 jalapeno pepper finely diced; seeds removed
bean sprouts (optional)
green onions (optional)

Steps:

  • Scoop the thick coconut cream from the top of just one of the cans into a large stockpot set over a medium-high heat. Melt the cream, add the curry paste and stir for a few minutes until they begin to sizzle. Add the diced garlic, jalapeno and chicken and sauté until the chicken is cooked through, about 7 minutes. Add the coconut juice from the first can and all the contents of the second can along with the chicken broth, cilantro root carrot, ginger lemon grass, fish sauce and lime zest and juice. Bring to a boil, turn down heat and let simmer gently for at least an hour or as long as you want, the longer the better. Cook vermicelli put putting them in boiling water for a minute. (Don't cook the vermicelli in the soup or they'll soak up the broth and it'll become a slurry). Pick out the lemongrass and ginger from the soup. Put some vermicelli in bowls and ladle soup over it. Add bean sprouts and sliced green onions if you want.

Tips:

  • Use fresh ingredients. Fresh coconut milk, vegetables, and herbs will give your soup the best flavor.
  • Don't be afraid to adjust the spices. The amount of curry powder and other spices you use is personal preference. If you like a mild soup, use less curry powder. If you like a spicy soup, use more.
  • Simmer the soup for at least 30 minutes. This will allow the flavors to develop and deepen.
  • Serve the soup with your favorite toppings. Some popular options include rice, noodles, vegetables, and herbs.
  • Store the soup in an airtight container in the refrigerator for up to 3 days. You can also freeze the soup for up to 3 months.

Conclusion:

Coconut curry chicken soup is a delicious and easy-to-make soup that is perfect for a cold day. The creamy coconut milk, flavorful curry spices, and tender chicken make this soup a surefire hit. So next time you're looking for a comforting and satisfying soup, give coconut curry chicken soup a try. You won't be disappointed!
