Yield 8 people

Number Of Ingredients 13

1 tablespoon olive oil
2 tablespoons butter
1 small yellow onion, thinly sliced
1 cup julienned carrots
1 clove garlic, minced
1 small head cabbage, sliced
1/2 cup fresh shredded coconut
2 tablespoons Indian curry powder
3/4 cup coconut milk
salt and pepper to taste
1/4 cup diced fresh tomato
1/4 cup chopped green onions
1/4 cup chopped cilantro (optional)

Steps:

  • 1. Place a large skillet or wok over high heat. Heat the oil and butter until smoking. Stir fry the onion, carrot, and garlic until the onion begins to soften, about 1 minute. Add the cabbage, coconut, and curry powder; stir fry for 2 more minutes. 2. Reduce heat to medium-low; pour in the coconut milk, and season to taste with salt and pepper. Cover, and cook to desired doneness. To serve, sprinkle with tomato, green onions, and cilantro.

Tips:

  • Choose the right cabbage: Use a firm, green cabbage for the best results. Avoid cabbages that are wilted or have brown spots.
  • Cut the cabbage thinly: This will help it cook evenly and quickly.
  • Use a large skillet: This will give the cabbage plenty of room to cook without overcrowding.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the cabbage will not cook evenly.
  • Cook the cabbage over medium heat: This will help it cook evenly without burning.
  • Stir the cabbage frequently: This will help it cook evenly and prevent it from sticking to the skillet.
  • Add the curry paste and coconut milk: Once the cabbage is cooked, add the curry paste and coconut milk. Stir to combine.
  • Simmer the curry: Bring the curry to a simmer and cook for 10 minutes, or until the cabbage is tender.
  • Season the curry: Taste the curry and season it with salt, pepper, and additional curry paste, if desired.
  • Serve the curry: Serve the curry hot with rice or naan.

Conclusion:

Coconut curry cabbage is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover cabbage. The curry is flavorful and creamy, and the cabbage is tender and slightly sweet. This dish is sure to please everyone at the table.
