Tips:

  • Use fresh shredded coconut: Fresh shredded coconut delivers the best flavor and texture to these coconut coffee muffins. Avoid using sweetened or dried coconut flakes, as they can alter the taste and consistency of the muffins.
  • Don't overmix the batter: Overmixing the batter can result in tough muffins. Mix the ingredients just until they are combined, being careful not to overwork the batter.
  • Use strong coffee: The coffee in these muffins adds a rich, robust flavor. Use a dark roast or espresso coffee for the best flavor.
  • Fill the muffin cups evenly: Divide the batter evenly among the muffin cups, filling each cup about 2/3 full. This will ensure that the muffins rise evenly and bake properly.
