- In a food processor, pulse the dates to create a thick paste. Add the walnuts, vanilla and 1/4 cup of the coconut and pulse until incorporated and a thick paste forms again. Using a spatula, transfer the date mixture to a medium bowl.
- Pour the remaining 1/4 cup coconut into a separate small, shallow bowl.
- Using a spoon, scoop out about 2 tablespoons of the date mixture and, with clean hands, work into a small rectangular bar 2 to 2 1/2 inches by 1 inch (or roll into balls). - Place the chocolate chips in a double boiler or a heatproof bowl set over (but not in) a small saucepan with about an inch of simmering water and melt over medium heat, stirring constantly.
- Remove from the heat and add the granola and flax seeds and stir to combine. Stick the bowl in the freezer to cool and harden the mixture a little bit, about 6 minutes. This makes it easier to roll the mixture into little balls.

- Place a prosciutto slice on each chicken breast. Trim prosciutto to fit inside the chicken breast with a 1/2-inch border of chicken.
- Place 2 slices mango in the center of each prosciutto slice.
- Roll the chicken breast lengthwise to completely enclose the mango and prosciutto. Tuck and pinch the ends to seal rolls tightly.
- Arrange chicken rolls on a baking sheet and refrigerate until very firm, about 30 minutes.
- Combine flour, salt, curry powder, black pepper, and thyme in a bowl. Pour mixture onto a plate.
- Pour beaten eggs onto a separate plate.

COCONUT BITES
Our family lived in Mexico in the early 60's. My brother remembers Jicama Bites and Cucumber Bites using the same seasonings as Coconut Bites. We use to buy these off the street vendors. I know the seasonings sound like a turnoff, but they're really good and a good conversation piece at get-togethers. Guessing on the number of servings.

- 1. Melt butter in sauce pan.
- 2. Add brown sugar and stir over med heat until sugar is melted and browns slightly.

DARK CHOCOLATE & COCONUT BITES

- In a medium sized pot, over medium low heat, melt chocolate, pb, syrup, cocoa, vanilla & sea salt. Once the everything is melted and combined (about 3-4 minutes), take off the heat & stir in the coconut. It will be a bit thick. Let it cool for a minute. Then, using your hands form TBL sized balls. If you want, you can roll in extra coconut. Cool in the refrigerator for at least 20 minutes. Keep stored in the refrigerator in an air tight container.
Tips:
- Use fresh coconut: Fresh coconut yields the best flavor and texture for these bites. If you don't have fresh coconut on hand, you can use unsweetened shredded coconut, but the flavor won't be as pronounced.
- Don't overmix the batter: Overmixing the batter will make the bites tough. Mix just until the ingredients are combined.
- Chill the batter before baking: Chilling the batter for at least 30 minutes will help the bites hold their shape in the oven.
