CLUB MED SANDPIPER'S WHITE CHOCOLATE BREAD
This recipe appeared in the Pittsburgh Post-Gazette, December 2006. I have yet to try this but am dying to!

Steps:
- Place the flour, yeast, sugar and salt in a small bowl, and mix with an electric mixer.
- Mix on medium-low speed for 1 minute. Add water, and mix another 12 minutes on medium or second speed. Add the chips and mix for an additional 2-3 minutes or until the chips are well distributed throughout the dough.
- Take dough out of the bowl and lightly knead into a ball. Let rest for 15-20 minutes.
- Preheat oven to 450 degrees.
- Cut the dough into 4 portions and knead into the desired form. (Note: These looked like French bread loaves when we saw them on the rack, ready to bake.).
- Place the loaves on a baking pan lined with parchment paper and bake for approximately 20 minutes or until nicely browned.

This is a recipe I've adapted from the Club Med version, after trial and error. My family and friends love this bread! This makes 2 loaves of bread, which I put in a french bread pan.

Steps:
- Place flour, yeast and gluten in mixing bowl. Mix on medium-low or first speed for 1 minute with the hook attachment.
- Add water and mix for another 2 minutes.
- Add salt and continue to mix for another 8 - 10 minutes on medium or second speed.
- Add the chips and mix for an additional 1 - 2 minutes, or until the chips are well distributed throughout the dough.
- Take the dough out of the bowl and lightly kneed into a ball.
- Put dough into an oiled bowl, cover with plastic wrap that has been sprayed with Pam and let rise for 45 minutes.
- Cut dough into two portions and kneat them into the desired form, and place them into your pans (lined with parchment or silpat).
- Let loaves rise for about an hour.
- Bake in a preheated 400 degree oven for about 20 minutes.
Tips:
- Use high-quality white chocolate for the best flavor. A good quality chocolate will melt smoothly and evenly, and will have a rich, creamy taste.
- Make sure the butter is softened to room temperature before creaming it with the sugar. This will help to create a light and fluffy batter.
