**Classic Bread Dressing: A Thanksgiving and Christmas Staple**

Bread dressing, also known as stuffing, is a beloved side dish that holds a special place on the Thanksgiving and Christmas dinner tables. Its origins can be traced back to ancient times when cooks used stale bread to create a flavorful and economical dish. Today, bread dressing is made with a variety of ingredients, including bread cubes, vegetables, herbs, and spices. It can be cooked inside the turkey or baked separately in a casserole dish. This article presents two classic bread dressing recipes: a traditional Southern-style dressing and a more modern version with dried cranberries and pecans. Both recipes are easy to follow and produce a delicious and comforting dish that is sure to be a hit with your holiday guests.

Let's cook with our recipes!

CLASSIC BREAD DRESSING RECIPE

Classic Bread Dressing Recipe image

Step away from the boxed bread stuffing! This easy bread stuffing recipe has all of the classic flavors of the bread stuffing you love, but it's even better because it's made from scratch with good-quality sourdough bread, fresh parsley and thyme, and celery, leeks, and garlic for that unmistakable Thanksgiving Day aroma. Sourdough bread has a slightly tangy flavor and soft texture that works well in this dressing. Look for a fresh loaf of sourdough bread in your supermarket's bakery section and cut it into cubes. Let the cubes air-dry on your counter overnight before toasting them on a baking sheet in the oven. For the most flavor and moisture, combine the wet and dry ingredients thoroughly and let them sit in the baking dish for 15 minutes before you bake the stuffing so that the bread fully soaks up all of the delicious flavors. If you're crunched for time (and who isn't on Thanksgiving?) this stuffing recipe can easily be prepped several hours in advance too. Assemble the recipe and pour the mixture into the baking dish, then let it sit in the refrigerator until you're ready to bake. Although cornbread dressing reigns supreme in the South, this savory, homemade bread stuffing deserves a seat at your Thanksgiving table too.

CLASSIC BREAD DRESSING

Classic Bread Dressing image

This is the classic bread dressing I make every year for Thanksgiving. I think it's from a Betty Crocker cookbook. Just posting it here to keep track of it.

Provided by DragonIady

Categories     Thanksgiving

Time 1h

Yield 1 9x13 pan, 8 serving(s)

Number Of Ingredients 8

3/4 cup margarine or 3/4 cup butter
2 large celery ribs, chopped
3/4 cup onion, finely chopped
9 cups soft bread cubes (15 pieces, I like to use a bread that's nutty or grainy)
1 1/2 teaspoons fresh thyme, chopped or 1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/2 teaspoon ground sage
1/4 teaspoon pepper

Steps:

  • Make bread cubes ahead of time and set out on counter so they can get a little "stale.".
  • Melt margarine in dutch oven over medium-high heat.
  • Cook celery and onion in margarine, stirring occasionally, until tender; remove from heat.
  • Toss celery mixture and remaining ingredients.
  • Pour dressing into a greased casserole. Cover with lid or aluminum foil and refrigerate until about 30 minutes before poultry is done.
  • Bake uncovered in the same oven with the poultry about 45 minutes or until hot. Spoon poultry drippings over stuffing as it cooks.
  • Continue to bake the dressing while you let the poultry stand 15 minutes before carving.

BETTY CROCKER'S CLASSIC BREAD TURKEY STUFFING

Betty Crocker's Classic Bread Turkey Stuffing image

This is the stuffing that my mom makes very Thanksgiving, and it's absolutely divine. The holiday just isn't the same without the taste of this dish. The day after it's cooked, it's wonderful cold, too! This recipe makes enough for a 12-pound turkey, about three quarts of stuffing.

Provided by Julesong

Categories     Chicken

Time 15m

Yield 3 quarts

Number Of Ingredients 9

12 cups bread, cubes (Mom makes her own sometimes)
1 cup unsalted butter
3/4 cup minced onion
1 1/2 cups chopped celery, stalks and leaves
1 cup chopped mushroom (optional)
2 teaspoons salt
1 teaspoon pepper
1 tablespoon ground sage
no-salt-added chicken broth (optional)

Steps:

  • In a large, heavy skillet over medium heat melt the butter, then sauté the onion and celery (and mushroom, if using) until the onion is soft, stirring occasionally.
  • Stir in the salt, pepper, and sage and cook for an additional 3 minutes.
  • Place the bread cubes into a large, deep bowl.
  • Pour 1/4 cup of the butter/celery mixture over the cubes and toss well, then repeat steps until all of the butter mixture is used.
  • Toss the cubes thoroughly to coat.
  • (Regarding the optional chicken broth: for dry stuffing, add little or no liquid; for moist stuffing mix in lightly with fork just enough chicken broth to moisten dry crumbs.) Let cool and use as stuffing for the turkey.
  • We've made this stuffing in the crockpot, as well, adding the chicken broth for moistness.
  • Adapted from Betty Crocker's Picture Cook Book, circa 1950.
  • Note: regardling the amount of salt - yes, the amount listed above is correct and is what is listed in the original Betty Crocker recipe. When the butter mixture is first added to the bread, if you taste it at this point it might seem salty (because it is sitting right on the surface of the bread) but remember that the liquid and butter soaks into the bread and redistributes evenly. Also, this recipe, being from the 1950s, is specifically for cooking *inside* the turkey, which a lot of people no longer do, and again the salt will redistribute from the juices in the meat. If you use a crockpot for cooking your stuffing, I'd recommend reducing the amount of salt.
  • Note #2: again, regarding the salt. You're going to have to decide for yourself about the salt. Having eaten this recipe for every year of my life I know it tastes wonderful as it's written. But that's just me.

Time 1h45m

Yield 10 cups

Number Of Ingredients 10

8 tablespoons unsalted butter
2 medium onions, chopped
3 celery ribs, chopped
1/2 cup chopped celery leaves (from inner celery ribs)
1 lb firm white bread, cut into 1/2-inch cubes and dried overnight (or in the oven)
1/4 cup chopped fresh parsley
2 teaspoons poultry seasoning
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1 1/2-2 cups turkey broth or 1 1/2-2 cups chicken broth, as needed

Steps:

  • In a big skillet, melt the butter over medium heat; add in onions, celery, and celery leaves.
  • Cook, stirring often, until the onions are golden, about 8 minutes.
  • Scrape the vegetable mixture into a big bowl; mix in the bread cubes, parsley, poultry seasoning, salt, and pepper.
  • Gradually stir in about 1 ½ cups of broth, until the stuffing is evenly moistened but not soggy.
  • Transfer stuffing to a lightly buttered casserole dish; drizzle with ½ cup broth, cover, and bake in a preheated 350° oven for 30-45 minutes (if you like crusty stuffing, remove foil the last 15 minutes of baking).

Tips:

  • Use fresh bread: Stale bread will make your dressing dry and crumbly.
  • Cube the bread evenly: This will help it cook evenly.
  • Toast the bread cubes: This will give them a nice crispy texture.
  • Use a variety of herbs and spices: This will add flavor to your dressing.
  • Don't overcook the dressing: It should be cooked through, but not mushy.
  • Serve the dressing warm: This is the best way to enjoy its flavor.

Conclusion:

Bread dressing is a classic side dish that can be enjoyed with a variety of meals. It is easy to make and can be customized to your liking. Try experimenting with different herbs, spices, and ingredients to create your own unique bread dressing recipe.
