Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Beat in milk. 1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon nutmeg
1/8 teaspoon salt
1 egg
1/2 cup milk
1/3 cup butter or 1/3 cup margarine, melted
1/4 cup granulated sugar
1/2 teaspoon cinnamon
1/4 cup butter or 1/4 cup margarine, melted

Steps:

  • In a mixing bowl combine flour, the 1/2 cup sugar, baking powder, nutmeg and salt. Make a well in the center of the dry ingredients.
  • In another bowl, beat egg slightly; stir in milk and 1/3 cup melted butter or margarine. Add egg mixture to flour mixture. Stir just until moistened (the batter may be lumpy). Lightly grease 12 muffin cups. Fill cups about two-thirds full with batter. Bake in 350 f oven for 20 to 25 minutes or until muffins are golden.
  • Meanwhile, in a shallow bowl combine the 1/4 cup sugar and cinnamon. Immediately dip tops of hot muffins into the 1/4 cup melted butter or margarine, then into the cinnamon-sugar mixture until coated. You need to work quickly as the muffins are hot.
  • Baked muffins can be placed into freezer containers or bags and frozen up to 1 month.
  • NOTE: You might find that you don't get all 12 muffins from this recipe. It really depends on how much you fill each muffin cup. I was able to get all 12 muffins from this recipe.

1 (11 ounce) can mandarin oranges (a 15-oz can works as well)
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 cup sugar
1/3 cup shortening
1 egg, slightly beaten
1/3 cup milk
1/4 cup melted butter
1/4 cup sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F Place muffin papers in muffin tins or spray tins with vegetable oil.
  • Drain oranges and pat dry with paper towels. Set aside.
  • Whisk together flour, baking powder, salt, nutmeg, allspice, and sugar. Cut in shortening with a pastry blender or fork until mixture resembles coarse crumbs.
  • Whisk together egg and milk. Pour into flour mixture and stir with a fork just until combined. Do not overmix. Batter will be thick. (If your batter is crumbly, you may add a SMALL splash of milk). Carefully fold in mandarin oranges.

1 large apple, peeled and diced
1/3 cup walnuts, chopped
1 egg
2/3 cup half-and-half cream or 2/3 cup milk
1 teaspoon cinnamon
2 tablespoons brown sugar

Steps:

  • Set oven to 400 degrees.
  • Line 16 muffin tins with paper liners.
  • In a large bowl, sift together flour, sugar, baking powder, 1/2 teaspoon cinnamon and salt.

  • Measure out 1/4 cup to add to topping ingredients; set aside.

1 cup rolled oats
1 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/3 cup butter, softened

Steps:

  • Combine oats and buttermilk or sour milk in a bowl, mix and let stand 1 hour.
  • Sift together flour, baking soda, baking powder and salt.

  • Preheat oven to 375 degrees. Butter a mini-muffin tin, and set aside. In a small bowl, combine 1/2 cup sugar and 1 tablespoon cinnamon; set aside.
  • In a large bowl, combine flour, baking powder, salt, and remaining teaspoon cinnamon; whisk to combine. In a small bowl, combine 6 tablespoons butter, remaining 1/2 cup sugar, buttermilk, and egg; whisk to combine. 2 cups sugar
2 cups water
2 tablespoons cinnamon
1 teaspoon vanilla extract

Steps:

  • In a medium sized mixing bowl, mix all of the flour, all but about a tablespoon of the sugar, half of the cinnamon, the butter, and 1 2/3 cups of the water, set the rest aside in case the batter is too thick.
  • stir until smooth, ladle out into a small pregreased muffin pan (the cupcake papers work too) until each muffin is to your liking as far as size goes.
  • In a smaller bowl, mix the rest of the sugar with the rest of the cinnamon, and sprinkle over the top of the muffins.

Steps:

  • Heat oven to 400 degrees Fahrenheit.
