1 cup sugar
1 cup confectioners' sugar
1 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
4-1/3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon ground cinnamon
1 cup finely chopped pecans, optional

Steps:

  • In a large bowl, cream the butter, sugars and oil. Add eggs and vanilla; mix well. Add flour, salt, baking soda, cream of tartar and cinnamon. Stir in the pecans if desired. 2 sticks (1 cup) unsalted butter, at room temperature
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
1 tablespoon pure vanilla extract
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon fine sea salt
1/2 teaspoon baking soda
1/2 cup granulated sugar
2 teaspoons ground cinnamon

Steps:

  • Make the cookie dough: Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  • In a stand mixer fitted with the paddle attachment, beat the butter and both sugars on medium speed until lightly and fluffy, 2 to 3 minutes. Next, with the machine running on low speed, add the eggs one at a time until incorporated, stopping and scraping down the sides of the bowl after each addition.
