1 cup sugar
1/4 teaspoon ground cinnamon
2 tablespoons water
1/4 teaspoon vanilla
3 cups shelled pecan halves

Steps:

  • In a large sauce pan over medium heat, combine evaporated milk, sugar, water and vanilla.
  • Heat mixture, stirring often, until sugar is dissolved.
  • Add cinnamon and stir. Some may float on top.
  • Add 3 cups of pecans to mixture and stir to cover.
  • Continue stirring pecans in mixture until pecans become coated well and mixture cooks away (gets absorbed/crystalized on the the pecans).
  • Spread hot coated pecans on wax paper; try to separate them as you spread them on the paper.
  • Let pecans cool completely.
  • Break apart pecans and store in air-tight container for up to 2 weeks.
  • To give as gifts, put in decorative glass jars or decorative tins lined with wax paper.
  • NOTE: I've tried using brown sugar (1:1 with the white sugar), but the pecans have a tendency to come out sticky and the sugars don't get 'crystalized'. I have not tried these with turbinado or unbleached cane sugar yet. If they don't turn out right, I'll have to keep them for myself !

I find they make great toppings for a low sugar ice cream dessert.

  • For the pecans: In a large bowl, toss the pecans with the melted margarine until all the pecans are coated. In a separate bowl, mix the cinnamon, sugar, and sea salt. Toss into the pecan mixture and coat evenly. Spread the pecans out on a baking sheet lined with parchment paper, making sure the pecans are not overlapping. Bake for 6 to 8 minutes.   • For the frosting: In the bowl of a stand mixer, whip the shortening and margarine until completely combined. Scrape the bottom of the bowl to ensure that all ingredients are mixed thoroughly. On low speed, slowly add the sugar a little at a time. Once the sugar is incorporated, add the vanilla paste and bourbon and mix on low until the liquids are incorporated. Scrape the bottom of the bowl and mix on medium-high speed until all the ingredients are combined and the frosting is fluffy, about 2 minutes. MAPLE CINNAMON SWEET POTATO SCONES WITH PECANS



Maple Cinnamon Sweet Potato Scones With Pecans image

This is a redo of a savory recipe I've made from I'm Pat, for a Gluten Free Kumara Damper, which inspired me to modify this recipe into a sweet(ish) scone, made with cinnamon, pecans, a bit of brown sugar and maple syrup, and for those who don't have self-rising flour handy, include the measurements for the baking powder and salt. I've also changed the flour, using part oat flour, and part all purpose or whole wheat, your choice - although use your imagination, or what's on hand. The ones in the photo were made with all-purpose and oat flour. You can make oat flour by whirring some oats in your grinder until they resemble flour. I love oat flour!! These are a real favourite at home! Merlin and Arwen (my parrots), negotiate for as much of the sweet potato as they can - generally the rule is that they can have all but 1/2 cup of it. When the scones come out of the oven is another story!! I hope you like my version of them - feel free to change it up as you'd like to.

Add the sweet potato, and cut it in as well; then stir in the cinnamon, pecans, and cinnamon chips. 1/3 cup sugar
3/4 teaspoon ground cinnamon
2 egg whites
2 tablespoons water
2 cups pecans

3 cups water

4 large apples, peeled and cored

Steps:

  • To make the granite, pour the cider into a large metal pan and place in the freezer until firm throughout but not frozen solid, about 2 hours, stirring every 30 minutes.
  • Meanwhile, to make the pecans, preheat oven to 250 degrees. Combine the sugar and cinnamon in a medium bowl. In another bowl, whisk together the egg whites and water until frothy. Place the pecans in the egg-white mixture and stir to coat. Drain well. Place the pecans in the cinnamon sugar and toss to coat well. Spread the nuts on a baking sheet in a single layer. Bake until the pecans begin to dry out, about 45 minutes, stirring twice. Set aside; you will not need all the pecans for this recipe.
  • To make the apples, combine the maple syrup, water and rum in a medium nonreactive saucepan. Bring to a simmer and add the apples. Cover and poach until the apples are tender, about 15 minutes. Remove the apples and set aside. Bring the poaching liquid to a boil. Reduce the heat slightly and simmer until reduced to 1 cup, about 30 minutes.
  • To serve, coat the bottom of 4 plates with the syrup mixture. Place 1 apple and a scoop of the granite on each plate. Scatter some cinnamon pecans over the plate and serve immediately.

2 1/2 c pecan halves
2 tsp vegetable oil
1 c granulated sugar
1 1/2 tsp cinnamon
3/4 tsp salt
1/4 c water
1 tsp vanilla extract

Steps:

  • 1. Put pecans and oil in a flat baking pan; stir until pecans are coated. Roast in 300 degree oven for 20 to 25 minutes, stirring frequently. Cool. Do not roast at a higher temperature or overcook -they will become bitter. (SEE NOTE BELOW.)
  • 2. Combine sugar, cinnamon, salt and water in a saucepan; cook, stirring over medium heat until sugar is dissolved.
  • 3. Boil to 236 degrees of a candy thermometer, or to soft ball stage*. FYI: Tonight I decided that I'd time the candied mixture (both times I made it) and from the time it started boiling until it reached the soft ball stage was only 4 minutes (and it only took about 4 minutes on medium to start boiling). So -in about 8 minutes from mixing it in the saucepan until you remove it from the heat and stir in the Vanilla and Pecans -you have a wonderful confection! Just thought I'd let you know that it isn't time nor labor intensive -just good.
  • 4. Remove from heat; blend in vanilla. Add pecans and stir until mixture is creamy (and loses its sheen). Turn out onto waxed paper and use a fork to separate pecans.
  • 5. * TO TEST FOR SOFT BALL STAGE: If you do not have a candy thermometer, drop a small amount of syrup into chilled water. When it forms a ball, but is soft enough to flatten when picked up with fingers (234 to 240 degrees), it will be to the soft ball stage.
  • 6. NOTE: You can skip the roasting step if you are in a hurry. However, if you taste the candied pecans that have been roasted and ones that have not been roasted, you will prefer roasting them before cooking on the stove -the flavor is so much richer.
  • 7. ENJOY!!
