CINNAMON CORNBREAD

Cinnamon Cornbread image

From the Family Suppers cookbook which I sent to my swap partner FloridaNative. This is super!! I just had to try it. You can also make it a spicy cornbread by subbing out the cinnamon and adding 1/2 tsp crushed red pepper flakes and reducing the sugar to 3 tbls instead of 1/3 cup. We loved it as cinnamon cornbread! I do not have a skillet, so I melted the butter in an 9-inch round baking stone (first step).

6 tablespoons unsalted butter
1 1/2 cups self-rising cornmeal mix

APPLE WAFFLES WITH CINNAMON SYRUP

Apple Waffles With Cinnamon Syrup image

I first made these as "pancakes" for a brunch at work years ago. I have actually never made the "waffles" for my family, but each time prepare them in the form of "pancakes." It's a nice "apple-cinnamon roll" type meal for a weekend brunch. Also, when I prepare it, I seem to have way too much syrup, so I always cut the syrup recipe in half.

Time 20m

Yield about 2 cups.

Number Of Ingredients 6

1/2 cup packed brown sugar
1/3 cup water
2 tablespoons butter or margarine
1 teaspoon cornstarch
1/2 teaspoon ground cinnamon
3 medium apples, peeled and thinly sliced

Steps:

  • In a saucepan over medium heat, bring brown sugar, water, butter and cornstarch and cinnamon to a boil; boil for 2 minutes until thick. Reduce heat to medium. Add apples; cook for 10-12 minutes or until apples are tender.

Nutrition Facts :

Tips:

  • For a crispy waffle, cook the batter in a preheated waffle iron. If the waffle iron is not hot enough, the batter will not cook evenly and will be soggy in the middle.
  • To make sure the waffles are cooked through, insert a toothpick into the center. If it comes out clean, the waffles are done. If there is batter on the toothpick, cook the waffles for a few minutes longer.
  • Serve the waffles immediately with your favorite toppings. Some popular toppings include butter, syrup, fruit, and whipped cream.

Conclusion:

This recipe for Cinnamon Cornbread Waffles with Apple Cinnamon Syrup is a delicious and easy way to enjoy a classic breakfast or brunch dish. The waffles are light and fluffy, with a slightly sweet and spicy flavor. The apple cinnamon syrup is the perfect complement to the waffles, adding a touch of sweetness and tartness. Whether you are serving them to a crowd or just enjoying a special breakfast for two, these waffles are sure to be a hit.
