1 cup butter, softened
¼ cup white sugar
1 egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
4 teaspoons ground cinnamon
1 egg white
1 cup chopped pecans
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a medium bowl, cream together the butter and sugar. Beat in the egg yolk and vanilla until the mixture is smooth. Combine the flour and cinnamon, stir into the creamed mixture. Press the mixture evenly into the prepared pan until it is about 1/4 inch thick. Brush the top with egg white and sprinkle with chopped pecans. Lightly press the pecans down into the dough.

I like this recipe because it is so simple to make. I read that cinnamon is very good for you. I found a cinnamon cookie here, but I didn't like that it didn't hold together. I took a recipe of mine and adapted it to the Cinnamon Cookie I wanted. If you choose to glaze this cookie, warm the frosting in the microwave so that it can be spread thinly.

Number Of Ingredients 9

1 cup sugar
1/2 cup vegetable oil
1/4 cup dark molasses
1 large egg
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2-2 tablespoons cinnamon
1 teaspoon salt
1/2 cup ground pecans

Steps:

  • Mix sugar, oil, molasses and egg.
  • Stir in flour, soda, salt and cinnamon.
  • Mix well.
  • Press the dough into a solid ball and divide in half with a knife.
  • Shape each half into a strip 15" x 1-1/2" 3" apart on a greased cookie sheet or a cookie sheet lined with parchment paper. You may use a rolling pin to help flatten.
  • Bake 375° until edges are light brown and tops are cracked, 6-7 minutes (soft), 8-9 minutes (crisp).
  • If you want you can glaze them now coming out of the oven with a powdered sugar, milk & vanilla paste.
  • Warm glaze in microwave before spreading on warm cookies.
  • Cool 2 minutes.
  • Cut each strip crosswise into slices for cookie bars.
  • Let cool and enjoy.

15 1/4 ounces vanilla cake mix
3 ounces vanilla pudding mix, Cook and Serve not instant (box that serves 4)
3/4 cup butter, melted
1/2 cup light brown sugar
2 eggs
1 tablespoon water
2 tablespoons cinnamon
8 ounces cream cheese, room temperature
1/4 cup butter, room temperature
5 cups powdered sugar
2 tablespoons powdered sugar
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350°.
  • Spray 9x13 baking dish with cooking spray, set aside.
  • In large bowl combine all ingredients for the bars. Stir until there are no lumps.
  • Spread into prepared baking dish and bake 20-30 minutes until edges are golden.
  • Let cool completely before frosting (let mine sit 2 hours).
  • Frosting:.
  • In mixing bowl beat together cream cheese and butter until smooth. Slowly add the powdered sugar and continue beating for 1-2 minutes until smooth and creamy.
  • Spread on cooled bars.
  • Sprinkle cinnamon sugar on top for garnish, I used a sieve to create just a light dusting.
  • Cut into squares when ready to serve.
  • Notes:.
  • Store chilled because of the frosting.

2 1/4 cups all purpose flour
2 tsp baking powder
1/4 tsp salt
2 tsp cinnamon
Pinch of fresh nutmeg
1/8 tsp allspice
Pinch of ground cloves
1/2 cup butter, melted
1 cup packed brown sugar
1 cup sugar
2 eggs
1 T vanilla extract
1/2-3/4 cup raisins (you can leave these out or try dried cranberries)
2 apples, cored and diced
Cinnamon Sugar mixture to sprinkle on top

Steps:

  • Preheat oven to 350 degrees. Spray a 9 by 13 pan with cooking spray. Set aside. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. In the bowl of a stand mixer, beat the butter with the sugars on medium until creamy. This will take a minute or two. Scrape down the sides if necessary. On low, add the eggs, one at a time. Beat until combined. Add in the vanilla. Beat on medium until everything is smooth and mixed together. Turn mixer on low. Add a little flour. Slowly mix and add until all of the flour is combined. Don't over mix. Stir in the raisins and apples. Spread the dough evenly into prepared pan. Use a spatula to make sure the dough is nice and even. Sprinkle the dough with the cinnamon/sugar mixture. Bake for about about 30 minutes. You want the bars to be golden brown. Remove the pan from the oven and cool on a rack. Cut the bars once they are cool.

Tips:

  • For a softer cookie bar, reduce the baking time by a few minutes.
  • For a chewier cookie bar, bake for a few minutes longer.
  • If you don't have a 9x13 inch baking pan, you can use a 10x15 inch jelly roll pan. Just adjust the baking time accordingly.
