2 avocados - halved, peeled, and pitted
½ lime, juiced
1 fresh jalapeno peppers, seeded and minced
½ cup diced tomatoes
¼ cup minced onion
1 ½ teaspoons minced garlic
¼ teaspoon salt to taste
2 pounds lean ground beef
½ lime, juiced
1 tablespoon minced garlic
1 teaspoon chili powder
½ cup diced onion
½ cup chopped cilantro
6 slices Monterey Jack cheese
6 hamburger buns

Steps:

  • Preheat an outdoor grill for medium heat.
  • To make the guacamole, mash the avocado in a medium bowl with the juice of half a lime, jalapeno, tomatoes, 1/4 cup onion, and 1 1/2 teaspoons of minced garlic; season to taste with salt, and set aside.
  • In a large bowl, mix together beef, the juice of half a lime, 1 tablespoon garlic, chili powder, 1/2 cup diced onion, and cilantro. Form the meat into 6 patties.
  • Cook the burgers to desired doneness on the preheated grill. Add a slice of cheese to each burger during the last minute of cooking. Serve on toasted buns with a dollop of guacamole.

1 large ripe avocado
1/4 cup minced white onion
1 lime, juice of
1 medium tomatoes, finely chopped
1/4 cup chopped cilantro leaf (or more, to taste)
1 anaheim chilies or 1 hot new mexico chili, seeded and minced
salt

Steps:

  • Peel, seed and mash the avocado in a bowl.
  • Add all the other ingredients.
  • Serve right away, or refrigerate for a few hours after sprinking with some extra lime juice, then pressing plastic wrap onto the surface (keeps mixture from turning brown).
  • Serve with tortilla chips.

4 ripe large avocados, peeled, pitted
1/2 cup finely chopped onion
1/2 cup chopped seeded plum tomatoes
1/2 cup chopped fresh cilantro
1 4-ounce can diced mild green chilies, drained
1 to 2 teaspoons finely chopped seeded jalapeño chilies

Steps:

  • Coarsely mash avocados in large bowl. Mix in onion, tomatoes, cilantro and canned chilies. Mix in jalapeño s to taste. Season with salt and pepper. Transfer to serving bowl. (Can be prepared 4 hours ahead. Place plastic wrap directly onto surface of guacamole. Refrigerate.)

We really loved this way to serve a chicken breast. Everything is fresh and yummy. The chicken breast comes out of the foil pack so juicy. It's a little on the plain side but the guacamole on top is what adds tons of flavor. This is a delicious and healthy way to serve chicken.

CHICKEN
2 to 4 chicken breasts, boneless and skinless
1/2 tsp black pepper
1/4 tsp salt
1 bunch (approximately 12 oz) fresh cilantro sprigs, stems left intact
2 small ripe plum tomatoes, finely chopped
6-12 Tbsp olive oil (3 tablespoons over each chicken )
GUACAMOLE
2 Haas avocados
1/2 lime juice
3 Tbsp chopped red onion
1 clove garlic, chopped
2 Tbsp chopped cilantro
3 Tbsp chopped tomatoes
1 pinch salt

Steps:

  • 1. Preheat over to 350. Sprinkle chicken with pepper and salt.
  • 2. Cut 2-4 pieces of heavy-duty foil (each large enough to enclose 1 breast half).
  • 3. Place chicken in center of each piece of foil. Put a couple of cilantro leaves on the side of chicken. Then put the 3 tablespoons of olive oil on the top of chicken.
  • 4. Fold foil over chicken and place on baking sheet.
  • 5. Cook for 45 minutes until no longer pink.
  • 6. While chicken is cooking, prepare guacamole.
  • 7. Remove cilantro from chicken; discard cilantro. Rewrap chicken to keep warm.
  • 8. To serve, place unwrapped chicken on serving platter and top with guacamole. Garnish with chopped tomatoes and enjoy. :)

Tips:

  • For the best flavor, use ripe avocados. Look for avocados that are dark green or black and slightly soft to the touch.
  • To easily remove the avocado from its skin, cut it in half lengthwise and scoop out the flesh with a spoon.
  • If you don't have a molcajete, you can make guacamole in a food processor or blender. Just be careful not to over-process it, or you'll end up with avocado mush.
  • To prevent the guacamole from turning brown, add a squeeze of lime juice or lemon juice.
  • Serve guacamole with tortilla chips, vegetable crudités, or as a topping for tacos, burritos, and enchiladas.
