½ cup butter
1 (16 ounce) package milk chocolate chips
1 teaspoon vanilla extract
1 cup chopped walnuts
1 (16 ounce) package colored miniature marshmallows
2 cups flaked coconut

Steps:

  • Melt the butter and chocolate chips in a heavy saucepan over medium heat; mix until smooth and creamy; remove from heat and stir in the vanilla. Fold in the marshmallows and walnuts.
  • Scatter about half of the coconut onto a large baking sheet. Form the chocolate mixture into two oblong logs and lay them onto the coconut. Use the remaining coconut to coat the logs. Refrigerate until the logs are firm, about 1 hour. Cut logs into 3/4-inch slices.

1/2 cup butter, cubed
1 package (10 ounces) pastel miniature marshmallows
1/2 cup chopped walnuts, toasted
2 cups flaked coconut

Steps:

  • In a large saucepan, melt chocolate chips and butter over low heat; stir until smooth. Cool slightly. Stir in marshmallows and walnuts., Divide mixture into three portions; place each portion on a piece of waxed paper. Using waxed paper, shape each into a 10-in.-long roll; roll in coconut. Wrap tightly in waxed paper; refrigerate 2 hours or until firm. Cut crosswise into 1/2-in. slices.

  • Pour and mix with marshmallows, nuts and coconut.
  • Pour on wax paper and form into rolls.

Mom used to make these no bake cookies at Christmas time every year. The colorful small marshmellow always brought a colorful place to her cookie trays. Mom made these using either Chocolate chips or Butterscothch chips. They are both sweet and delicious.

12 oz chocolate chips or
18 oz butterscotch chips
7 oz coconut flaked
1 stick butter, cold
101/2 oz minature colored marshmellows

Steps:

  • 1. In a double boiler, melt butter first and choc chips or (Butterscotch chips), cool not to long, add nuts and minature marshmellow until partly melted. Put half on coconut on wax paper and roll up. Twist ends of wax paper to close. Repeat with other half. Chill overnight and slice into cookies.

  • If you don't have a rolling pin, you can use a wine bottle or even a glass to roll out the dough.
