Vegetable oil, for deep-frying
1/2 cup all-purpose flour
1 large egg, beaten
1/2 cup breadcrumbs
1 large onion, cut into three or four 1-inch-wide rings
1 pound ground sirloin
Finely chopped chipotle in adobo, to taste
Kosher salt and freshly ground black pepper

2 tablespoons olive oil
8 jarred jalapeno slices
2 tablespoons butter
2 large pretzel rolls, halved
2/3 cup spicy barbecue sauce
1/4 cup mayonnaise

Steps:

  • Heat 2 inches of vegetable oil in a heavy-bottomed pot to 350 degrees F.
  • Put the flour in one shallow dish, the egg in a second and the breadcrumbs in a third. Coat the onion rings first in the flour, then dip them into the egg, shaking off any excess, then coat them with the breadcrumbs. Fry the rings until golden brown, 2 to 3 minutes. Drain on a paper towel-lined plate and set aside.
  • Put the ground sirloin in a bowl and add the chipotle and some salt and pepper. Mix well and form the mixture into 2 burgers.
  • Heat a cast-iron skillet over medium-low heat and add the olive oil. Cook the burgers to your liking, 10 to 15 minutes. Set aside on a plate and keep warm by inverting another plate on top. In the same skillet, fry the jalapeno slices until lightly browned, 2 to 3 minutes. Wipe out the skillet and add the butter. Toast the pretzel rolls until lightly browned.
  • Mix together the barbecue sauce and mayonnaise in a small bowl.
  • To assemble: Spread some of the sauce on the bottom halves of the rolls. Top with the burgers, jalapeno slices and onion rings. Spread more sauce on the top halves of the rolls and serve.

1 pound lean ground beef
3 tablespoons chopped onions
3 tablespoons oils
2 1/2 cups frozen hash brown potatoes, thawed
1 (11-ounce) can vacuum-packed whole kernel corn with red and green peppers, drained
1 (4 1/2-ounce) can chopped green chili, drained
1/2 cup barbecue sauce
8 ounces (2 cups) shredded Cheddar cheese
1/4 teaspoon salt, if desired
1/4 teaspoon pepper, if desired
1 (16.3-ounce) can large buttermilk refrigerator biscuits or reduced-fat buttermilk biscuits

Steps:

  • Heat oven to 400°F. Cook bacon until crisp. Drain on paper towel crumble. Set aside. In 12-inch cast-iron or ovenproof skillet, cook ground beef and onion over medium heat until beef is thoroughly cooked, stirring frequently. Drain. Place beef mixture in medium bowl cover to keep warm.Add oil to same skillet. Heat over medium-high heat until hot. Add potatoes cook 3 to 5 minutes or until browned, stirring constantly. Add cooked ground beef, corn,chiles, barbecue sauce, cheese, salt and pepper mix well. Cook until thoroughly heated, stirring occasionally. Sprinkle with bacon.Separate dough into 8 biscuits. Arrange biscuits over hot mixture. Howdy, pardner! When our son requested a cowboy theme for his birthday party, I planned a Western-style meal including these savory burgers. In the spirit of true chuck wagon fare, I served them on large biscuits rather than buns.

1/2 cup water
2 pounds ground beef
1 tube (16.3 ounces) large refrigerated biscuits
1/8 teaspoon seasoned salt

  • In a large bowl, combine soup mix and water; crumble beef over mixture and mix well.
