1/2 cup uncooked long grain rice
Dash salt
4 cups milk
2/3 cup sugar, divided
2 eggs
2 tablespoons butter
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • In a heavy saucepan, combine the water, rice and salt; bring to a boil over medium heat. Reduce heat; cover and simmer for 15 minutes or until water is absorbed. Add milk and 1/3 cup sugar; bring to a boil. Reduce heat; simmer, uncovered, for 30-40 minutes or until slightly thickened. , Whisk together the eggs and remaining sugar. Gradually stir 2 cups hot rice mixture into the egg mixture; return all to pan, stirring constantly. Cook and stir over low heat for 3-5 minutes until mixture reaches 160°. Remove from the heat; stir in butter and vanilla. Pour into a serving bowl. , Refrigerate for 2 hours or until chilled. Just before serving, sprinkle with cinnamon.

Danish Christmas rice pudding with warm cherry sauce or Risalamande is traditionally served on Christmas Eve. Whoever finds the hidden almond receives a small gift. I like this recipe because it is cooked entirely on the stove top and cooks in one hour, rather than in the oven for two hours or more. Can be made in advance and refrigerated until serving time. The Danes often buy a store bought cherry sauce, but I've included a recipe for home-made. :) Adapted from an online source.

4 cups full-fat milk
1/3 cup short-grained white rice (65 g)
1/2 vanilla pod (reserve the other half for the sauce)
1 cup whipping cream
3 tablespoons granulated sugar
1/3 cup almond paste (or use almond flakes or finely chopped almonds)
1 whole almond (more if you have several children present)
1 1/2 cups frozen pitted cherries (about 185 g)
1/2 tablespoon lemon juice
3 tablespoons sugar
1/2 vanilla pod
1 1/2 cups water
2 tablespoons cold water
1 tablespoon potato starch (corn starch can be substituted)
fresh mint leaves (optional for garnish)

Steps:

  • Split half of the vanilla pod length ways, scrape out the seeds.
  • Place the milk and vanilla in a heavy-bottomed pan. Bring to a boil.
  • Reduce the heat. Add the rice gradually, stirring constantly.
  • Increase the heat and bring to a boil again.
  • When the milk boils, reduce the heat, cover and simmer on a very low heat for about 1 hour or until the rice is cooked. Stir from time to time, making sure that the rice doesn't stick too much to the bottom.
  • Leave to cool completely.
  • Whip the cream together with sugar. Fold the whipped cream and almonds into the rice. You can add more sugar or more almonds if you wish. Serve with warm cherry sauce.
  • Now make the cherry sauce. Place the cherries in a medium saucepan. Add sugar and 1 1/2 cups water. Add the vanilla pod. Simmer until the cherries are tender.
  • Combine the potato starch with 2 tablespoons cold water.
  • Bring the cherries to a boil. Remove the vanilla pod from the pot. Reduce the heat, and , stirring constantly, slowly pour the water with the starch. Simmer for a few minutes until the sauce thickens slightly.
  • Stir in the lemon juice and serve warm over the rice pudding. Garnish with a fresh mint leaf, if desired.
  • * I used frozen sour cherries in this recipe, but regular sweet cherries should work as well.

3 drops green food coloring, or as needed
6 cups crispy rice cereal (such as Rice Krispies®)
14 pretzel sticks, or as needed
1 tablespoon sprinkles, or as needed
1 (7 ounce) pouch prepared white frosting
14 candy stars, or as needed

Steps:

  • Spray a 9x13-inch baking pan with cooking spray.
  • Melt butter in a large saucepan over low heat. Add marshmallows and stir continually until completely melted and smooth, 3 to 5 minutes. Add food coloring, 3 to 4 drops at a time, until you reach the desired color. Stir until color is uniform. Remove from heat and add crispy rice cereal. Stir with a buttered spatula until cereal is completely coated and evenly green.
  • Pour cereal mixture into the prepared baking pan and press in firmly. Add sprinkles to the top and press in. Allow to cool and set, 20 to 30 minutes.
  • Cut cereal mixture in the pan in half lengthwise to create 2 sections. Cut each section into approximately 6 or 7 small triangle tree shapes and transfer them to a plate. Grandma always put a cinnamon stick and one almond in the rice before serving. Whoever found the almond was supposed to get married next, according to tradition.

1 onion, chopped

1 ¾ cups uncooked white rice

2 cups boiling water
1 cup Champagne
¾ cup dried apricots
1 carrot, peeled and grated
1 tablespoon butter
6 tablespoons chopped sun-dried tomatoes

Steps:

  • Soak raisins in a bowl of hot water until soft, 5 to 10 minutes. Drain.
  • Heat olive oil in a large saucepan over medium heat. Cook and stir onion and garlic in the hot oil until fragrant, about 5 minutes. Stir in raisins, rice, and salt; cook and stir until rice is coated with oil, about 3 minutes.
  • Pour boiling water and Champagne into the saucepan. Cover and cook until liquid is absorbed and rice is tender, about 20 minutes.
  • Place dried apricots in a small saucepan and cover with water. Bring to a boil; simmer until soft, about 5 minutes. Drain and cool slightly, about 5 minutes. Cut into strips.

red food coloring[enough to make christmas red]
green m % m's [u can buy the colors seperate at walmarts]
4-5 cups rice crispies [add 1 cup at a time]

  • 1. melt w. choc chips in double boiler til smooth. add milk stir til smoothe add red food coloring til its christmas red. stir til smoothe. take off heat
  • 2. add green m & m's then add rice crispies 1 cup at a time.
  • 3. pour into an oblong pan sprayed with pam
  • 4. let set in fridge. take out. take a spatula sprayed with pam along the sides to loosen it. spray a resin knife with pam and cut into bars
