4 tablespoons butter, melted
2 cups heavy whipping cream, divided
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 package (14.3 ounces) Oreo cookies, quartered
4 ounces semisweet chocolate, chopped
1/2 teaspoon vanilla extract
Optional: Whipped cream and chopped Oreo cookies

Steps:

  • Combine crumbs and butter; press into bottom of a 9- or 10-in. springform pan. Freeze. Whip 1-1/2 cups whipping cream until stiff peaks form; refrigerate. , In a large bowl, beat cream cheese until smooth. Gradually add sugar; blend thoroughly. 8 ounces cream cheese, room temperature
1/2 cup butter, room temperature
1 1/4 cups granulated sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
5 drops red and green food coloring (or as much as need for desired color)
1/2 teaspoon peppermint extract
2 tablespoons powdered sugar (optional)

Steps:

  • Preheat oven to 350°F.
  • Line 2 baking sheets with parchment paper or silicone mats.
  • Beat cream cheese and butter together at high speed until fluffy and smooth; 1-2 minutes.
  • Add sugar to the butter mixture and beat until fully incorporated and fluffy; 1-2 minutes. Beat in the eggs and vanilla; 1 minute.
