2 ½ cups milk
6 tablespoons all-purpose flour

¼ pound lobster meat

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Melt 3 tablespoons butter in a skillet, and saute the onions and celery until tender.
  • Heat the milk in a saucepan over medium heat, and mix in the flour and 1 1/2 teaspoons butter until well blended. Gradually blend the cheese into the mixture. Season with salt and pepper.

  • Spray a 9x13-inch casserole dish with cooking spray.

1 red bell pepper, chopped
2 cups cremini or white mushrooms, sliced
2 teaspoons salt
pepper to taste
1 loaf (8 cups, 1-inch cubes) Italian bread, Ciabatta or Baguette (crusty bread)
1 1/2 dozen (18) large eggs
1 cup whole milk
1 1/2 cups cheddar cheese, shredded

Steps:

  • Heat oven to 375°F. Brown the sausage in a saute pan over medium heat for 3 minutes, breaking it into bite size pieces. Add the mushrooms, bell peppers, 1 tsp salt and pepper. Cook an additional 5 minutes. Let cool. Drain.
  • In a bowl, beat the eggs and milk. Add remaining salt and cheese; stir to combine.
  • Add the bread cubes and cooled sausage mixture to a greased 13×9-inch baking dish. Toss to combine.
  • Pour the egg mixture over the bread and sausage: press the bread mixture down gently to soak up some of the egg mixture.
  • Cover the dish with foil and bake for 30 minutes; uncover and bake an additional 20 minutes. Serve immediately.

There are many kinds of breakfast egg casseroles, but for my children, this is the one that makes Christmas Christmas. I make it the day before and the first person up on Christmas morning pops it in the oven. Prep time does not include the overnight in the refrigerator which is necessary.

1 loaf small dense white bread
1/2 cup butter
1 tablespoon chopped onion
1 lb grated cheddar cheese
8 eggs
1 quart milk
1 teaspoon salt
pepper
mushroom
bell pepper
ham

Steps:

  • Cut crusts off loaf of bread.
  • Cut bread into half inch cubes.
  • Note: I have used a Pepperidge Farms type loaf or have made my own bread such as an oatmeal white bread.
  • Melt butter in a bowl and toss bread cubes to coat.
  • Grease a 9" x 13" glass casserole dish.
  • Layer bread cubes, grated cheese, mushrooms, ham, etc. in dish.
  • Combine the eggs, milk salt and pepper and beat.
  • Pour over casserole.
  • Cover with foil and let set overnight in the refrigerator so bread absorbs some of the egg mixture.
  • To bake, place casserole in larger pan with 1 inch hot water.
  • Bake, at 375 degrees (350 convection) for 1 1/2 hours or until silver knife inserted in center comes out clean. I start the baking with the foil on, then uncover for the last half hour.
  • Casserole can be cooked without the water bath, but the sides will be a little crustier. It also bakes faster this way.

The next morning, you pop it in the oven, and when the aroma wafts through the house, then you know that Christmas has finally arrived. This is our Christmas...

12 slices of cubed bread (i use texas toast bread)
1/2 pound of medium sharp shredded cheese
8 eggs
2 cups of milk
2 cups of ground ham, shrimp, crabmeat, mushrooms or crumbled bacon.
1/2 stick of butter, melted

Steps:

  • 1. THE NIGHT BEFORE CHRISTMAS: Use Pam spray and grease a 9X13 baking dish.
  • 2. Prepare the bread. I use frozen Texas toast bread. (easier to cube frozen, thaw slightly) You can use French bread if Texas toast is not available. Remove the crusts from the bread, cut into 1/2 inch cubes, and place the cubes in the baking dish.
  • 3. Top with the cheese. Beat the eggs and add to the milk and pour over the bread and cheese. Top with cooked ground ham, cooked sausage, shrimp, crabmeat, mushrooms or crumbled bacon, whatever you desire. (I've tried them all, and they are all yummy!) Pour the melted butter over all. Cover with saran wrap and refrigerate overnight.
  • 4. CHRISTMAS MORNING: Remove the casserole from the fridge, and heat it up slowly so your cold dish doesn't break. I let mine sit on the counter for about an hour and put it in the oven when I put it on pre-heat. Bake at 350 degrees for 35 minutes to 45, depending on the heat of your oven and the altitude. High altitude may take almost an hour to bake. Check periodically with toothpick. When your casserole is done, cover loosely with foil and let rest for 10 minutes so when you cut it, it will come out of the dish in a square.
  • 5. Cook's Tip: My original recipe called for a whole stick of butter, but I found that 1/2 stick works just fine for us. This is a good recipe for you to make your own. If you have some favorite ingredients that you would like to see added for Christmas morning, have at it! Enjoy!

1 lb Bob Evans pork sausage
4 c shredded potatoes
1/4 stick salted butter, melted
3/4 c shredded onion
16 oz cottage cheese
12 oz mild cheddar cheese
9 large eggs
1 c sliced mushrooms
1 tsp salt
1/2 tsp pepper
1/4 tsp garlic salt

Steps:

  • 1. Preheat oven to 375.
  • 2. In a large skillet, saute pork sausage, onions and mushrooms. Cook on medium high until sausage is no longer pink. Sausage should be crumbled. Drain and set aside.
  • 3. I shred my own potatoes, but frozen shredded potatoes will work fine also. If shredding your own potatoes, make sure to drain and press out as much moisture as possible.
  • 4. In a 13x9 glass baking dish, add shredded potatoes and 1/4 stick of melted butter, mix potatoes and butter until completely coated. Using a spatula, spread mixture evenly onto bottom of baking dish.
  • 5. In a mixing bowl, combine cottage cheese, shredded cheese, eggs, sausage/mushroom/onion mixture, salt, pepper and garlic salt. Mix well.
  • 6. Once mixed, pour onto prepared shredded potatoes.
  • 7. Bake at 375 degrees, uncovered, for 60 minutes.

2 pounds bulk pork sausage
1 large onion, chopped
2 cups cooked rice
3 cups crisp rice cereal
3 cups shredded cheddar cheese
6 large eggs
2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
1/2 cup whole milk

Steps:

  • In a skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Place in a lightly greased 13x9-in. baking dish. Layer with the rice, cereal and cheddar cheese. In a bowl, beat the eggs, soup and milk. Spread over top. , Bake, uncovered, at 350° for 55-60 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting. Refrigerate any leftovers.

3 large eggs
1 c granulated sugar
1 tsp vanilla extract
1/4 tsp almond extract
1 c chopped dates
1 c flaked coconut
1 c toasted walnuts, chopped fine
1/2 c additional granulated sugar

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 2-quart deep baking dish with non-stick spray and set aside. In a large bowl beat eggs until lemon-colored. Gradually beat in sugar and extracts. Stir in date, coconut and chopped nuts. Pour into greased casserole dish and bake 30-35 minutes. Remove from oven and stir with wooden spoon (mixture will be moist and sticky). Cool dish on wire rack until cool enough to handle. Roll into 1" balls and roll in additional granulated sugar. Yield: 4 dozen
