When I couldn't figure out what to do with a roll of bulk chorizo sausage, this recipe was born. It may sound similar to other dip recipes, but don't let that fool you...the flavor of this dip definitely sets it apart from the rest. This also reheats well. Enjoy!

Tips:
- Use a variety of cheeses. This recipe calls for cheddar and Monterey Jack cheese, but you can use any type of cheese that you like. Some other good options include mozzarella, pepper Jack, or queso fresco.
- Don't overcook the eggs. The eggs should be cooked until they are just set, but not hard-boiled. If you overcook the eggs, they will become tough and rubbery.
- Use a good quality chorizo. The chorizo is the star of this dish, so it's important to use a good quality chorizo that has a lot of flavor. Look for a chorizo that is made with fresh pork and has a nice smoky flavor.
- Serve with your favorite dipping sauce. These egg rolls are delicious served with a variety of dipping sauces, such as salsa, guacamole, or sour cream.
Conclusion:
Chorizo queso egg rolls are a delicious and easy-to-make appetizer that is perfect for any occasion. They are crispy on the outside, cheesy and flavorful on the inside, and they are sure to be a hit with your guests. So next time you are looking for a quick and easy appetizer, give these chorizo queso egg rolls a try!
