2 cups all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
½ cup butter
1 ½ cups white sugar
2 eggs
1 teaspoon vanilla extract
2 ½ cups shredded zucchini
2 tablespoons white sugar
1 cup chopped walnuts
1 cup chocolate chips

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a jelly roll pan.
  • Sift flour, cocoa powder, baking soda, and salt together in a bowl.
  • Beat the butter and 1 1/2 cups sugar with an electric mixer in a large bowl until smooth. cooking spray
6 tablespoons water
2 tablespoons ground flax meal
2 cups self-rising flour
6 tablespoons unsweetened cocoa powder
½ cup butter, softened
1 ½ cups white sugar
1 teaspoon vanilla extract
2 ½ cups finely grated zucchini

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 3 mini muffin pans with cooking spray.
  • Mix water and flax meal together and set aside until gelled, about 5 minutes. Mix flour and cocoa powder in a small bowl.
  • Beat butter and sugar with an electric mixer in a large bowl until well combined. And 1/2 of the flax mixture and beat well. Add remaining flax mixture and vanilla extract; mix well. It has become a family favorite and it works great to make the brownie layer when you have so many zucchini that you don't know what to do, freeze it and bring it out later to frost for a quick dessert . 2 c grated zucchini
1 1/2 c sugar
3/4 c oil
2 c plain flour
1/3 c cocoa
1/2 c chopped nuts ( pecans or walnuts)
1 1/2 tsp baking soda
2 tsp pure vanilla extract
FROSTING:
4 Tbsp butter
1/4 c milk
1/2 c miniature marshmallows
1/2 c chopped nuts
1 c sugar
1/2 c chocolate chips ( semi-sweet)
1 tsp pure vanilla extract

Steps:

  • 1. For the Brownies, combine the grated zucchini, sugar, oil and vanilla. Mix the flour, baking soda and cocoa. Add to the zucchini mixure. Add the chopped nuts. Pour into a 9x13 jelly roll pan and bake at 350 degrees for about 35-40 minutes Let cool before frosting.
  • 2. Frosting: Melt butter over medium heat in a saucepan. Add sugar and milk. Bring to a boil , stirring frequently. Cook and stir about 1 minute. Remove from heat. Add chocolate chips and marshmallows. Stir until melted. Add vanilla and stir. Spread icing over brownies and top with chopped nuts.
