12 Tablespoons Butter (Softened)
4 Tablespoons Canola Oil
2 Teaspoons Vanilla Extract
4 Eggs
2 Cups Walnuts (Roughly Chopped)
1 1/2 Cups Butter (Softened)
3 Cups Powdered Sugar
1 Teaspoon Vanilla extract
4 Tablespoons Heavy Cream
3/4 Cup Butter (Softened)
4 Ounces Cream Cheese (Softened)
1 Tablespoon Cocoa Powder
1/4 Teaspoon Salt
3 Cups Powder Sugar
4 Tablespoons Heavy Cream
2 Cups Walnuts (Roughly Chopped)
1 1/2 Cups Mini Chocolate Chips
1 Cup Semisweet Chocolate Chips
1/2 Cup Heavy Cream

Steps:

  • Preheat your oven to 350 degrees F. Spray (3) 9 inch cake pans with Pam baking spray.
  • In a medium kettle, combine water and sugar. Bring to a boil, and cook for 1 minute.
  • Remove from heat and whisk in the dark chocolate and butter until melted. Add in oil and vanilla.
  • Cool slightly and whisk in eggs one at a time. Then stir in cocoa powder, baking powder, baking soda, and salt.
  • Gradually stir in flour a little at a time until just combined. Do not over mix.
  • Fold in walnuts.
  • Evenly divide batter between prepared pans and bake for 30-35 minutes.
  • In a large bowl, beat butter until light and fluffy. Stir in vanilla. Stir in powdered sugar a little at a time. Add heavy cream as needed to reach your desired consistency.
  • In a large bowl combine butter and cream cheese until light and fluffy. Stir in cocoa powder, vanilla, and salt.Add powdered sugar a little at a time, adding heavy cream as needed.
  • In a small bowl, combine walnuts and chocolate chips.
  • In a small kettle , heat up the heavy whipping cream until steaming. Pour over chocolate chips. Allow to stand for 1 minute before whisking until smooth
  • Frost the first cake layer with around 1 cup of frosting.
  • Place the second cake layer on top, and repeat.
  • Top with the final cake layer.
  • Spread chocolate frosting over the top and down the sides of the top layer.
  • Coat the bottom of the cake with the walnut/chocolate chip mix
  • Drip ganache down the sides of the cake by using a squeeze bottle.
  • Pipe dollops of chocolate frosting on top using a star tip.
  • Sprinkle with remaining walnut and chocolate chips.

1/4 cup unsweetened cocoa
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup dark brown sugar, packed
1 large egg
1 cup milk
1/3 cup canola oil
1 teaspoon vanilla
1 cup walnuts, chopped
3/4 cup semi-sweet chocolate chips
1/2 cup chopped pitted dates or 1/2 cup dried apricot (optional)
2 tablespoons chopped walnuts
2 tablespoons semi-sweet chocolate chips

Steps:

  • Preheat oven to 350º.
  • Lightly grease and cocoa pans; tap out excess cocoa.
  • In a medium mixing bowl, whisk together cocoa, flour, baking powder, baking soda, and salt.
  • In a large bowl, using a whisk or an electric mixer, blend together sugar, egg, milk, oil and vanilla.
  • Slowly add in the dry ingredients, beating just until combined.
  • Stir in walnuts, chocolate chips, and dates.

At any point during the 1980s, you could've opened the middle pantry drawer in our kitchen and discovered a treasure trove of baked goods from our supermarket's Entenmann's display: fudge-frosted doughnuts, mini chocolate chip cookies, thick-glazed cupcakes. My father had--and still has--an epic sweet tooth that deserves a three-hundred-page volume all to itself. The king of the drawer, though, was the Sour Cream Chocolate Chip Nut Loaf, because it only made rare appearances at the supermarket, and, much to our dismay, eventually disappeared from shelves across the country. (We never did find out why.) My father and I were the biggest fans of the loaf, and in the twenty-five years since I've seen it, I don't think I've ever walked by the Entenmann's section without secretly hoping I'll spy one amid the doughnut holes and crumb cakes. Until then, I have this homemade version, which comes about as close as you can get.

1/4 cup whole milk (60 milliliters)
1 teaspoon white vinegar
2 cups (270 g) all-purpose flour
1 teaspoon baking soda

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 9-by-5-inch loaf pan with nonstick cooking spray.

4 ripe bananas, peeled
250g caster sugar
2 eggs
140g softened butter
250g plain flour
2 tsp baking powder
100g walnut piece
100g chocolate chip

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with the back of a fork. Add the eggs and mix well with an electric hand whisk until fully incorporated, then add the butter and mix for a couple mins more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Give everything one final mix before tipping into the lined loaf tin.
  • Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices, either warm or at room temperature. Any uneaten cake will keep in an airtight container for up to 3 days.

1 cup dates, pitted, roughly chopped
1/2 cup water
1 teaspoon bicarbonate of soda
200 g milk chocolate, chopped
125 g butter, softened
1/2 cup brown sugar
1/4 cup maple syrup
2 eggs, room temperature
1 1/2 cups self-raising flour
1 cup walnuts, roughly chopped

Steps:

  • Place dates and water in a saucepan over low heat; cook for 5-10 minutes or until liquid is absorbed.
  • Remove from heat;add the soda, stir and allow to cool.
  • Preheat oven to 180°C.
  • Grease and line a loaf pan 10cm x21cm, 7 cm deep.
  • Melt the chocolate in a heatproof bowl over simmering water, stir with a metal spoon for 5 minutes, or until chocolate is melted; remove from heat and cool.
  • Using a mixer, cream butter, sugar and maple syrup until pale and creamy; add eggs 1 at a time, beating well after each egg is added.
  • Stir in melted chocolate.
  • Sift flour over this chocolate mixture, then using a metal spoon, fold in until combined.
  • Fold in the dates and walnuts, then spoon into prepared pan.
  • Bake for 50 minutes or until cooked when a skewer inserted into the centre comes out clean.
  • Allow to stand in the pan for 10 minutes, then turn out to a wire rack to cool.
  • Serve sliced (and buttered if you wish).
