CHOCOLATE "SUNDAE" ICE POPS

Chocolate

Frozen treats are an excellent place to include healthier ingredients--almost anything in the form of an ice pop brings back the wide-eyed joy of childhood (and it takes a while to consume even just a few ounces!). I love making frozen pops with fruit purees and juices, but these are my favorite because they are creamy, chocolaty, and decadent. My kids think it's hilarious that they are eating avocado in their pop (oh, to be five...).

Provided by Melissa d'Arabian : Food Network

Time 8h15m

Yield 8 to 12 ice pops

Number Of Ingredients 8

1 cup low-fat milk
1 cup low-fat evaporated milk
1 avocado, halved, pitted and peeled
1 ripe banana, peeled
3 tablespoons honey
1/4 cup cocoa powder
1 teaspoon vanilla extract
Up to 4 tablespoons chocolate syrup

Steps:

  • To a blender add half the milk, half the evaporated milk, the avocado, banana, honey, cocoa and vanilla. Blend until well combined and smooth, about 30 seconds. Add the remaining milk and evaporated milk and blend for 10 seconds until well incorporated. Drizzle each popsicle mold with 1 teaspoon of chocolate syrup. Divide the milk mixture among the molds, filling each up 1/4-inch from the top. Cover the molds with the lid (insert ice-pop sticks if needed) and freeze overnight. To unmold, dip the mold into warm water for 30 seconds to loosen the ice pops.

SALTED TAHINI CHOCOLATE CHIP COOKIES

Salted Tahini Chocolate Chip Cookies image

When the chef Danielle Oron was growing up in the New Jersey suburbs, she knew that her Israeli family's habits of dousing vanilla ice cream with tahini and spreading halvah on toast would be considered odd. Sesame has long been shunned in American desserts, but its addition to a confection can add a nutty, salty undertone, and sesame desserts are now popping up all over the place. These chocolate chip cookies, developed by Ms. Oron, are a great place to start for the home baker seeking more sesame. Rich, savory and sweet, they are one of the rare variations that are just as good as the original.

Time 45m

Yield 12 to 18 cookies

Number Of Ingredients 12

4 ounces/113 grams unsalted butter at room temperature
1/2 cup/120 milliliters tahini, well stirred
1 cup/200 grams granulated sugar
1 large egg
1 egg yolk
1 teaspoon vanilla extract
1 cup plus 2 tablespoons/150 grams all-purpose flour, or matzo cake meal (See tip)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon kosher salt
1 3/4 cups/230 grams chocolate chips or chunks, bittersweet or semisweet
Flaky salt, like fleur de sel or Maldon

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter, tahini and sugar at medium speed until light and fluffy, about 5 minutes. Add egg, egg yolk and vanilla and continue mixing at medium speed for another 5 minutes.
  • Sift flour, baking soda, baking powder and kosher salt into a large bowl and mix with a fork. Add flour mixture to butter mixture at low speed until just combined. Use a rubber spatula to fold in chocolate chips. Dough will be soft, not stiff. Refrigerate at least 12 hours; this ensures tender cookies.
  • When ready to bake, heat oven to 325 degrees and line a baking sheet with parchment paper or nonstick baking mat. Use a large ice cream scoop or spoon to form dough into 12 to 18 balls.
  • Place the cookies on the baking sheet at least 3 inches apart to allow them to spread. Bake 13 to 16 minutes until just golden brown around the edges but still pale in the middle to make thick, soft cookies. As cookies come out of the oven, sprinkle sparsely with salt. Let cool at least 20 minutes on a rack.

Time 40m

Yield 6 or more cakes

Number Of Ingredients 11

10 tablespoons/150 grams unsalted butter, plus more for greasing pans
1/3 cup/25 grams unsweetened cocoa, plus more for pans
3 tablespoons/27 grams sesame seeds
1/2 cup/60 grams all-purpose flour
Pinch of salt
5 1/2 ounces/165 grams 70 percent dark chocolate, in pieces
3 large eggs
1 cup/200 grams superfine sugar
5 tablespoons/100 grams tahini
Zest of 1 lime
Crème fraîche or ice cream, for serving

Steps:

  • Heat oven to 350 degrees. Use butter to grease 6 half-cup muffin molds or similar, or use smaller molds. Dust molds with cocoa and sprinkle the sesame seeds in the bottom of each. Sift together remaining 1/3 cup cocoa with the flour and a pinch of salt. Set aside.
  • Melt chocolate and remaining 10 tablespoons butter in a heatproof bowl over simmering water, or in a small, heavy saucepan on very low heat. (Watch carefully if using a saucepan.) When almost completely melted, remove from heat and stir until smooth. Set aside.
  • Using a whisk or electric beater, whisk eggs and sugar together until pale and fluffy, about 5 minutes. Stir a little of this mixture into the tahini to lighten it, then stir the tahini into the egg mixture. Stir in the cooled chocolate mixture. Fold in the cocoa mixture.
  • Pour the batter into the molds and set molds on a baking sheet. Place in the oven and bake 12 to 14 minutes, less for smaller molds. A skewer or toothpick inserted in the middle should not come out clean.
  • Cool 20 minutes or more before unmolding. Dust tops with lime zest and serve with crème fraîche or ice cream.

  • You can also add other flavors to the ice pops, such as vanilla extract, cinnamon, or nutmeg.
  • Be sure to freeze the ice pops for at least 4 hours before serving.
  • If you want to make the ice pops ahead of time, you can store them in the freezer for up to 2 weeks.
