Steps:

1 1/4 cups sour cream (regular or nonfat)
1 egg
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 300 degrees. To make the crust, combine graham crackers, melted butter and sugar in a medium bowl. Mix well with a fork to combine. Press the mixture into the bottom of a 9-inch springform pan that has been coated with non-stick spray. Set aside.

1 stick (8 tablespoons) unsalted butter, melted
2 tablespoons sugar
Pinch fine salt
Three 11.5-ounce containers whipped cream cheese
1 1/4 cups sugar
One 16-ounce container sour cream, at room temperature
1 cup heavy cream
4 large eggs, at room temperature
4 ounces bittersweet chocolate chips
6 ounces butterscotch chips
1 teaspoon pure vanilla extract

Steps:

  • Position a rack in the middle of the oven and preheat to 325 degrees F.
  • For the crust: Toss together the cookie crumbs, butter, sugar and salt in a medium bowl. Press into the bottom of a 10-inch springform pan. Bake until golden brown, 15 to 18 minutes. 1 6-ounce package semisweet chocolate chips
2 8-ounce package cream cheese, room temperature
1 cup sugar
4 large eggs, room temperature

1/4 teaspoon grated lemon peel
Topping
1 8-ounce package cream cheese, room temperature

1/2 recipe Chocolate Wafer Cookie Crust
6 ounces raspberries
2 1/4 cups sugar, plus 2 tablespoons
3 1/2 pounds (seven 8-ounce packages) cream cheese, room temperature
1/2 cup unbleached all-purpose flour
1 cup sour cream, room temperature
1 1/2 teaspoon pure vanilla extract
5 large eggs

Steps:

  • Preheat the oven to 350 degrees. Butter a 10-inch springform pan. Press the dough into the bottom of the pan, patting it into an even layer. Wrap the exterior of the pan (including the base) in a double layer of foil. Freeze the dough in the pan for 5 minutes.
  • Place the pan on a baking sheet. Bake until the crust is firm to the touch, 12 to 15 minutes. Transfer pan to a wire rack to cool completely.

  • Set pan inside a large, shallow roasting pan. Carefully ladle boiling water into roasting pan to reach halfway up sides of springform pan. Bake 45 minutes; reduce oven temperature to 325 degrees. Continue baking until cake is set but still slightly wobbly in the center, about 30 minutes more. Turn off oven; leave cake in oven with the door slightly ajar, 1 hour.
