Time 2h45m

Yield Makes 18

Number Of Ingredients 12

2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons coarse salt
1 1/2 sticks unsalted butter, room temperature
1 1/3 cups sugar
3 large eggs, room temperature
1 1/2 teaspoons pure vanilla extract
3/4 cup whole milk
5 ounces bittersweet chocolate (61 percent cacao), melted and cooled
Milk-Chocolate Pudding
Milk-Chocolate Ganache for Pudding Cupcakes
Chocolate Curls, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Line 18 standard muffin cups with paper or foil liners. In a large bowl, whisk together flour, baking powder, and salt. In a separate bowl, beat butter with sugar on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Reduce speed to low and add flour mixture in 2 batches, alternating with milk. Beat in melted chocolate.
  • Divide batter evenly among muffin cups, filling each about two-thirds full. Bake until a tester inserted in centers comes out clean, 18 to 20 minutes. Let cool in pan on a wire rack 5 minutes, then remove cupcakes and let cool completely on rack. (Cupcakes can be made ahead up to this point and stored in an airtight container at room temperature up to 2 days.)
  • Transfer pudding to a pastry bag fitted with a 1/4-inch plain round tip. Insert tip in top of a cupcake and squeeze until cupcake begins to mound. Repeat with remaining cupcakes. Refrigerate until cold, about 30 minutes and up to 1 day. Spoon about 2 teaspoons ganache over top of each cupcake; top with chocolate curls. Refrigerate at least 15 minutes before serving.

Yield Makes about 1 1/2 dozen

Number Of Ingredients 11

2 1/2 cups cake flour
1 1/2 cups sugar
1 tablespoon plus 1/2 teaspoon baking powder
1/2 teaspoon salt
6 ounces unsalted butter, softened
1/2 cup egg yolks
1 cup milk, warmed
2 1/4 teaspoons pure vanilla extract
Mexican Chocolate Pudding
Chocolate Buttercream Frosting
Gold petal dust (optional)

Steps:

  • Preheat oven to 325 degrees with rack set in center. Line 18 standard-size muffin cups with paper liners; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix together flour, sugar, baking powder, and salt. Add butter and mix until well incorporated.
  • Mix together milk and vanilla in a small bowl. With the mixer running, add milk mixture in three additions, scraping down the sides of the bowl after each addition. Add egg yolks and mix until well combined.
  • Fill prepared muffin cups 1/2 full with batter. Transfer to oven and bake until cakes spring back when lightly touched, 15 to 20 minutes. Let cupcakes cool slightly in their tins before transferring to a refrigerator. Refrigerate cupcakes until chilled.
  • Using a 1-inch round biscuit cutter, cut a small hole in the center of each cupcake, pushing cutter down about 2/3 of the way and using a twisting motion to release cake; reserve scraps. Fill hole with pudding and cover with scraps to enclose.
  • Place buttercream in a pastry bag fitted with a star tip (such as Ateco #822). Pipe frosting in a zigzag pattern across the top of each cupcake. Sprinkle with gold petal dust, if desired. Serve.

DOUBLE CHOCOLATE CUPCAKES WITH SALTED CHIA PUDDING FROSTING

Double Chocolate Cupcakes With Salted Chia Pudding Frosting image

These vegan and gluten-free cupcakes remind me of that old song lyric, "Make new friends, but keep the old." I've got my old friend cake and my new pal chia pudding. I like them both, and I thought it was time to bring them together. I personally love salted coconut frosting and could stand to make this one even saltier. Play around with the salt to suit your buds, just make sure to get it right before you let the pudding set in the fridge, as it will be hard to stir it after that.

Yield Makes 12 cupcakes

Number Of Ingredients 20

For the frosting:
1 (14-ounce) can full-fat coconut milk
5 Medjool dates, pitted and chopped
1/4-1/2 teaspoon of sea salt
5 tablespoons chia seeds
For the cupcakes:
1 cup unsweetened almond milk
1 tablespoon apple cider vinegar
1 tablespoon flax meal
3 tablespoons water
1 cup chickpea (garbanzo bean) flour
1/2 cup brown rice flour
1/4 cup cocoa powder
1 teaspoon aluminum-free baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
2 teaspoons vanilla extract
1/4 cup real maple syrup
1/4 cup coconut oil, melted
1 cup dairy-free chocolate chips (I like Enjoy Life), plus more for garnish

Steps:

  • Make the frosting:
  • Combine the coconut milk, dates, and salt in a blender and blend until the mixture is smooth. This might take a few minutes. If end up with small bits of dates, that's OK. But you don't want to see chunks or even white slivers of the coconut milk. The color should be a very light tan. Taste, and if you want to add more salt, do it now and then blend for a few more seconds (I really like the saltiness a teaspoon brings). Pour the mixture into a medium jar or container with a lid. Stir in the chia seeds. Put the frosting in the fridge, covered, for at least 6 hours (overnight is best).
  • For the cupcakes:
  • Preheat the oven to 350ºF. Line a standard cupcake pan with 12 paper liners.
  • In a small bowl, combine the almond milk and apple cider vinegar. In another small bowl, make a flax egg: Mix the flax meal and water together. Let both the almond milk mixture and the flax egg rest for at least 10 minutes.
  • In a large bowl, whisk together the flours, cocoa powder, baking powder, baking soda, and salt.
  • Combine the vanilla, maple syrup, flax egg, and almond milk mixture in a bowl. Add the wet ingredients into the dry and stir to combine. Do not overstir. Pour in the coconut oil and chocolate chips and give it a few more stirs, until just combined.
  • Fill each cupcake liner with 1/4 cup of the batter. Bake for 18 to 20 minutes or until a fork or toothpick inserted in the center comes out clean.
  • Let your cupcakes cool on a wire rack if you have one. When they're completely cool, top them with the frosting. Sprinkle a few more chocolate chips on top.

Tips for Perfect Chocolate Pudding Cupcakes:

- **Use high-quality chocolate.** The quality of the chocolate you use will greatly impact the flavor of your cupcakes. Choose a chocolate that is at least 70% cacao and has a rich, dark flavor. - **Don't overmix the batter.** Overmixing the batter will make the cupcakes tough. Mix the batter just until the ingredients are combined. - **Fill the cupcake liners only 2/3 full.** The cupcakes will rise as they bake, so don't fill the liners all the way to the top. - **Bake the cupcakes until a toothpick inserted into the center comes out with just a few moist crumbs attached.** Overbaking the cupcakes will make them dry. - **Let the cupcakes cool completely before frosting them.** This will help the frosting to set properly. - **Be creative with your frosting.** You can use any type of frosting you like on these cupcakes. Some popular options include chocolate ganache, vanilla buttercream, and whipped cream. - **Garnish the cupcakes with your favorite toppings.** Some popular options include chocolate chips, sprinkles, and chopped nuts.

Conclusion:

Chocolate pudding cupcakes are a delicious and easy-to-make dessert that is perfect for any occasion. By following these tips, you can make sure that your cupcakes turn out perfect every time. With their rich chocolate flavor and creamy pudding filling, these cupcakes are sure to be a hit with everyone who tries them.
