CHOCOLATE OMELETTE
From James Reeson Alive and Cooking. This is a memory one as my husband attempted something like this for the kids when I was away on a weekends mothers camp, but his was a disaster. From Debbwl's suggestion I have added strawberries to the recipe but of course you could add other fruit that is in season.

Steps:
- Whisk together the eggs and drinking chocolate powder.
- Warm a non-stick pan and pour egg mixture straight in and cook for 3 to 4 minutes.
- Sprinkle over the chocolate buttons and place under a hot grill (broiler) until the buttons and melted.
- Slice and serve.
ASIAGO CHEESE & CHOCOLATE TOMATO OMELETTE
The hybrid chocolate tomato and Asiago cheese pairs well in this light and fluffy omelette,it goes well with cripy bacon or Canadian bacon too. Seven grain toast with a hot cup of coffee and you're ready to start your day!

Steps:
- 1. Using a 12 inch non-stick skillet and a spatula,lightly spray the pan with cooking spray,(or use 1tablespoon of butter) and pour in the beaten eggs. Let the eggs start to set up alttle,then lift one side of the eggs to allow the top uncooked portion to flow under the cooked egg,do this until the omelette starts to take form.
- 2. Now add the tomatoes,cheese and pepper,fold it over. Cook for 1 minute more and plate the omelette,enjoy! :) Note: I will post photos later!:)
Tips:
- Use a non-stick skillet to prevent the omelette from sticking.
- Heat the skillet over medium heat. If the skillet is too hot, the omelette will brown too quickly and not cook through.
- Before adding the egg mixture to the skillet, swirl a little butter or oil around to coat the bottom.
- Pour the egg mixture into the center of the skillet and let it spread out evenly.
- Cook the omelette for 2-3 minutes per side, or until it is cooked through.
- If you are adding fillings, such as cheese, vegetables, or meat, do so before the omelette is completely cooked.
- Fold the omelette in half or quarters and serve immediately.
