ANCHO CHOCOLATE MOUSSE WITH GRAND MARNIER

Categories     Chocolate     Dessert

Yield 6 servings

Number Of Ingredients 8

4 ounces sweet baking chocolate
4 ounces semisweet chocolate
1/4 cup Grand Marnier or other
orange-flavored liqueur
1 teaspoon freshly ancho chile powder, freshly ground
2 cups whipping cream
1/2 cup confectioners' sugar, sifted
Semisweet chocolate curls for garnish

Steps:

  • Combine the chocolates, Grand Marnier and ancho powder in a heavy saucepan and cook over low heat until chocolate melts, stirring constantly. Remove from heat and cool to lukewarm. Beat the whipping cream, adding the confectioners' sugar until soft peaks form. Gently fold about one-fourth of the whipped cream into the chocolate, then fold in the remaining whipped cream. Spoon the mousse into individual serving dishes and chill until ready to serve. Garnish with semisweet chocolate curls.

Tips:

  • Use high-quality chocolate: The better the chocolate, the better the mousse will taste. Look for chocolate with a cocoa content of at least 70%.
  • Make sure the cream is very cold before whipping it: This will help it whip up faster and create a stiffer mousse.
  • Don't overbeat the cream: Overbeaten cream will become grainy and lose its volume.
  • Fold the whipped cream into the chocolate mixture gently: Overmixing will deflate the mousse and make it less airy.
  • Chill the mousse for at least 4 hours before serving: This will allow the flavors to meld and the mousse to set properly.

Conclusion:

Chocolate Grand Marnier Mousse is a light, airy, and decadent dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste by adding different flavors or toppings. With its rich chocolate flavor and a hint of orange liqueur, this mousse is sure to be a hit with everyone who tries it.
