1 can (16 1/2 ounces) pitted dark sweet cherries in heavy syrup, undrained
1 tablespoon cornstarch
1 container (8 ounces) frozen whipped topping, thawed
1/2 teaspoon almond extract
1/3 cup sliced almonds, toasted

  • Heat oven to 350°F. Make cake mix as directed on package for angel food (tube) pan -- except stir cocoa into cake mix (dry). Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and not sticky. Cool completely, about 2 hours, as directed on package.

1/3 cup finely chopped maraschino cherries, well drained
1 ounce semisweet chocolate, grated
GLAZE:
2 tablespoons butter
1 ounce semisweet chocolate
1 tablespoon light corn syrup
1 cup confectioners' sugar
3 to 5 teaspoons maraschino cherry juice
Maraschino cherries and fresh mint, optional

Steps:

  • In a large bowl, prepare cake mix according to package directions. Fold cherries and chocolate into batter., Gently spoon into an ungreased 10-in. tube pan. ½ cup unsweetened cocoa powder
1 ¾ cups cake flour

  • Move oven rack to lowest position (remove other racks). Heat oven to 350°F. In extra-large glass or metal bowl, beat cake mix, cold water and extract with electric mixer on low speed 30 seconds.
