Tips:

  • Mise en Place: Before you start baking, ensure all your ingredients and equipment are ready and measured. This will save time and prevent scrambling during the baking process.
  • Use Quality Chocolate: The quality of your chocolate will greatly impact the flavor of your chocolate crisps. Opt for high-quality semisweet or bittersweet chocolate for a rich, decadent taste.
  • Melt Chocolate Properly: To avoid burning or seizing, melt the chocolate slowly and gently. Use a double boiler or microwave-safe bowl over simmering water, stirring constantly until the chocolate is smooth and melted.
  • Chill the Dough: Chilling the dough before baking helps the crisps hold their shape and prevents them from spreading too much. Make sure to chill the dough for at least 30 minutes before forming the cookies.
  • Bake Until Golden Brown: Keep a close eye on the crisps while they bake. They should be golden brown around the edges but still slightly soft in the center. Overbaking will dry them out and make them crumbly.
