This recipe is a great way to use up leftover rice. I had some leftover brown rice from dinner the night before and it worked perfectly in this dish. The Hoppin' John was a hit with my family and I will definitely be making it again.

I was a bit hesitant to try this recipe because I'm not a big fan of black-eyed peas. But I'm so glad I did! The peas were cooked perfectly and the overall flavor of the dish was amazing. I will definitely be making this again.

I've made this recipe several times and it's always a hit. My family loves the smoky flavor of the bacon and the tender black-eyed peas. I usually serve it with cornbread and collard greens.
