8 oz good quality dark chocolate chips (although I've used Nestles semi-sweet chocolate chips and they are still very good)
1 c coarsely chopped walnuts, pecans or almonds (make sure the pieces are not too small)
1/2 c dried cranberries (Craisins) or you can use raisins

Steps:

  • 1. Line a small baking sheet with waxed paper.
  • 2. Place chocolate chips in a 2 cup Pyrex measuring cup and microwave on 50% power for approx 25 seconds - then stir well. Continue doing this until the chocolate chips are almost completely melted - reducing the time as you go. Be careful to not let the chocolate burn.
  • 3. Add the nuts and dried cranberries to the melted chocolate and mix well.
  • 4. Drop tablespoon fulls of the chocolate mixture onto the waxed paper-covered cookie sheet.
  • 5. Place in the fridge for at least 15 minutes. Enjoy.
  • 6. I like to store mine in the freezer.

This is what the recipe description says: "These say Merry Christmas through and through - a special treat made just for you!" These rum balls made a great gift to family last Christmas, they are definitively worth sharing (plan to do it every year). As with most, these rum balls are best if let mellow for a few days, otherwise the rum flavor is overpowering.

Number Of Ingredients 8

1 cup dried cranberries
1/3 cup dark rum (navy)
2 1/2 cups vanilla wafers, finely crushed (about 70 wafers)
1 1/2 cups ground pecans, toasted
1/3 cup powdered sugar (confectioners)
1/3 cup margarine, melted (or butter)
14 white chocolate baking squares, chopped (1 oz each)
chocolate sprinkles (optional)

Steps:

  • Measure cranberries into small bowl. Add rum. Stir well. Let stand for 1 hour.
  • Combine next 4 ingredients in large bowl. Add cranberry mixture. Mix well. Shape into balls, using 1 tbsp for each. Place on waxed paper lined baking sheet. Let stand for about 1 hour until firm.
  • Heat white chocolate in small saucepan on lowest heat, stirring often, until almost melted. Do not overheat. Remove from heat. Stir until smooth. Place 1 ball on top of fork. Dip into chocolate until completely coated, allowing excess to drip back into pan. Place on same waxed paper lined baking sheet. Repeat with remaining balls and chocolate.
  • Sprinkle balls with chocolate sprinkles before white chocolate sets. Chill for 1 hour.

I based this recipe on several others I've seen. It is so good! The cranberries cut the sweetness of the white chocolate. Don't leave them out or it may be too sweet. If you use evaporated milk, one large can = 1 1/2 cups. Toasting the nuts is optional but it brings out their flavor. This is a great holiday sweet.

3 (12 ounce) packages white chocolate chips or 32 ounces white chocolate, broken into pieces
2 1/3 cups granulated sugar
1/2 cup butter
1 (16 ounce) jar marshmallow creme
1 1/2 cups dairy eggnog or 1 1/2 cups evaporated milk
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon nutmeg, freshly grated
1/2 cup pecans or 1/2 cup pistachios, chopped
1/2 cup dried cranberries, chopped

Steps:

  • Toast the nuts, either on the stovetop in a large skillet over medium-high heat or in the over at 350F for about 8 minutes. Set aside to cool.
  • Grease a 13x9 inch pan with butter and set aside.
  • Melt the white chocolate in a double boiler or in a bowl set over simmering water. Set aside, keeping it over the warm water so it does not solidify again.
  • Combine sugar, butter, marshmallow crème, 3/4 cup eggnog and salt in a heavy 4 quart saucepan (if using evaporated milk use all of it at this point).
  • Cook over medium high heat, stirring constantly. When mixture comes to a full boil, boil for exactly 5 minutes, still stirring constantly and making sure to scrape the bottom of the pot to prevent scorching.
  • Remove from heat. Stir in remaining 3/4 cup eggnog, melted white chocolate, vanilla, nutmeg, nuts and cranberries. Beat until well blended.
  • Pour into prepared pan. Cool to room temperature, refrigerating if desired. This may take several hours. When firm, cut into squares.
