A delicious, sweet, dessert bread for all cappuccino lovers! It's perfect as dessert, or topped with ice cream! Maple syrup can be substituted for honey in this recipe. Baking time is however long it takes your bread machine.*NOTE* there is one last ingredient to be added at the same time as the chocolate chips: 2 envelopes instant mocha cappuccino mix. The Zaar puter will not recognize it *NOTE*.

1/3 cup cocoa powder
1 1/3 cups bread flour
1 1/3 cups whole wheat flour
3 tablespoons powdered milk
1 1/2 teaspoons salt
1 1/2 tablespoons honey
2 1/4 teaspoons active dry yeast
1/2 cup semi-sweet chocolate chips

Steps:

  • Place all ingredients (except chocolate chips and mocha mix - see NOTICE* in intro) in the pan of the bread machine in the order recommended by the manufacturer.
  • Select Basic Bread cycle; press Start.
  • If your machine has a Fruit setting, add the chocolate chips and mocha mix at the signal, or about 5 minutes before the kneading cycle has finished.

Who doesn't like coffee and chocolate for breakfast- it's like-"have your cake and drink it too"- This bread with dark chocolate, coffee, toasted almonds. and chocolate chip frosting with Irish whiskey should wake you up in a hurry. This was one of my dad's favorite bread desserts.

BREAD:
2/3 c brown sugar, firmly packed
1/2 c butter,softened
1 c semi-sweet mini chocolate chips, melted
2 large eggs
2 1/2 c all purpose flour
1/2 c strong cold coffee (liquid)
1 c unsweetened applesauce
1 tsp baking soda
2 tsp vanilla extract
1/2 c semi-sweet mini chocolate chips
GLAZE:
1/2 c semi-sweet mini chocolate chips
1 Tbsp butter
5 tsp whiskey or water
1/2 c powdered sugar
1/4 tsp vanilla

Steps:

  • 1. Heat oven to 350^. Grease (2) 8x5 inch loaf pans-bake 45-50 minutes or (5) 5x3-inch mini loaf pans.-bake 30-35 minutes Bread: Combine brown sugar and butter in a large bowl. Beat at medium speed, scraping bowl often until smooth and creamy. Add melted chocolate chips and eggs; continue beating until well mixed.
  • 2. Add flour, applesauce,cold coffee, baking powder, soda and vanilla. Reduce speed to low; continue beating, scraping bowl if necessary,until mixture is creamy. Stir in the chocolate chips.
  • 3. Spoon batter into prepared pans of your choice. Bake until center crack is dry when touched. Cool 10 minutes. Remove from pan/pans, to wire rack and cool completely.
  • 4. Glaze: Combine chips,butter and whiskey in a heavy saucepan. Cook over low heat, stirring constantly, until melted and smooth. Remove from heat, stir in powdered sugar,and vanilla until smooth and creamy. Frost loaves while a little warm.

1 tablespoon instant coffee granules

2 1/4 teaspoons yeast
1/2 cup semisweet chocolate chips
1 egg, beaten
1 teaspoon instant coffee granules
1 tablespoon granulated sugar

Steps:

  • Measure carefully, placing all ingredients except chocolate chips, egg, 1 teaspoon instant coffee granules and the granulated sugar in bread machine pan in the order recommended by the manufacturer. Add chocolate chips at the Raisin/Nut signal.Select Dough/Manual cycle. Do not use delay cycles.Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.Grease large cookie sheet. Shape dough into 10x3-inch rectangle on cookie sheet. Cover and let rise in warm place 40 to 50 minutes or until double. (Dough is ready if indentation remains when touched.)Heat oven to 400°. Make 5 diagonal slashes, 1/4 inch deep, across top of loaf, using sharp knife. Make 5 additional slashes in opposite direction to make x-shaped cuts. Brush egg over loaf. Mix 1 teaspoon coffee granules and the granulated sugar sprinkle over loaf. Bake 18 to 20 minutes or until loaf is golden brown and sounds hollow when tapped.
