Time 50m

Number Of Ingredients 11

2 1/4 c flour
1 tsp baking soda
1 Tbsp fresh ground flax seed (optional)
1 c margarine or butter, softened
3/4 c brown sugar, firmly packed
1/4 c sugar
3.4 oz instant pudding mix (any flavor but vanilla or banana work well)
1 tsp vanilla
2 large eggs
12 oz chocolate chips (any flavor)
1 c nuts, chopped (optional)

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a bowl, combine flour, baking soda and fresh ground flax seed. Set aside.
  • 3. In a separate bowl, blend margarine, sugars (sugar substitutes can also be used), pudding mix, and vanilla; blend until creamy. Beat in eggs.
  • 4. Gradually stir in flour mixture until almost blended. Fold in chocolate chips and nuts just until combined. Do not over mix!
  • 5. Press dough into a 13x9 glass baking dish. Bake for 20-25 minutes until light golden brown and dough is set. Cool completely before serving.
  • 6. ***There are so many combinations to try. -Chocolate pudding mix with chocolate and peanut butter chips. -Coconut pudding mix with white chocolate chips and Macadamia nuts -Banana pudding mix with chocolate chips and pecans -Butterscotch pudding mix with butterscotch chips and pecans -Chocolate pudding mix with caramel chips or Reeses Pieces They're all so good! The possibilities are endless!

Tips:

  • Use high-quality chocolate chips for the best flavor. Semisweet or dark chocolate chips are good choices.
  • If you don't have pudding mix, you can make your own by whisking together 1/2 cup cornstarch, 1/2 cup sugar, and 1/4 teaspoon salt in a saucepan. Then, whisk in 2 cups milk and bring to a simmer over medium heat, stirring constantly. Reduce heat to low and simmer for 1 minute, or until the mixture has thickened. Remove from heat and stir in 1 teaspoon vanilla extract.
  • To make the cookie bars even more decadent, you can add 1/2 cup chopped nuts or dried fruit to the batter.
  • Be careful not to overmix the batter, as this will make the cookie bars tough. Mix just until the ingredients are combined.
  • Bake the cookie bars until they are golden brown on top and a toothpick inserted into the center comes out clean.
  • Let the cookie bars cool completely before cutting them into bars.

Conclusion:

Chocolate chip pudding cookie bars are a delicious and easy-to-make treat that are perfect for any occasion. They are soft, chewy, and loaded with chocolate chips. Plus, they are made with simple ingredients that you probably already have on hand. So next time you are looking for a sweet treat, give these chocolate chip pudding cookie bars a try.
