CHOCOLATE COVERED CHERRY COFFEE

Annacia at food.com, inspired me to make this coffee, but I slightly tweaked the recipe to suit my taste. The name of the coffee describes it best!

Number Of Ingredients 5

2/3 cup water
1-1/4 tsp. instant coffee, either maxwell house, folgers, or sanka (*see note)
1/2 tsp. sugar (or add 1/4 teaspoon of saccharin sweetener)
1 dark chocolate, or milk chocolate covered cherry ( i really like cello's milk chocolate covered cherries, when making this coffee)
reddi wip, or cool whip (to garnish the coffee)

Steps:

  • 1. In a coffee cup, heat water and coffee in the microwave until hot. I heated mine for 1 minute & 15 seconds, in a 1,000 watt microwave oven. (Or heat the water and coffee on top of the stove in a small saucepan.) Add the sugar, and stir.
  • 2. Now add the chocolate covered cherry, stir well to dissolve. After the chocolate has dissolved, remove the cherry from the cup.
  • 3. Top the coffee with desired amount of Reddi Wip, or Cool Whip. Place the cherry ontop the whipped topping, and serve.
  • 4. *Note: Now a days when making this coffee, I use Sanka Naturally Decaffeinated Coffee. But if using ground coffee, use 2 teaspoons per each 2/3's cup of water in your coffee maker. Also, I have found that not all of the chocolate from the chocolate covered cherry, dissolves completely in the hot coffee. You may still see bits of chocolate floating in your cup.

My hubby loves Chocolate Covered Cherries. I bought a box yesterday and when I got up this morning there was a single one left in the box. I just know that in his self sacrificing way he was just protecting me from the evil sugar (Yeah, right! lol). Anyway, I had coffee making and when it was done I just popped that morsel into my coffee cup without really thinking about it. Well, YUM!

8 -10 ounces fresh hot coffee
1 chocolate covered cherry candy
1 teaspoon Splenda sugar substitute (or to taste) or 1 teaspoon sugar (or to taste)

Steps:

  • Brew your favorite coffee and pour yourself a cup.
  • Put a chocolate covered cherry candy into the cup.
  • stir gently and add the Splenda or sugar.
  • Stir to dissolve.
  • Enjoy!

1 cup blanched almonds
1 cup sugar
1 stick cold unsalted butter, cut into pieces
3/4 cup all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons finely grated orange zest
1/4 cup unsweetened cocoa powder
1 3/4 pounds fresh sour cherries, pitted (2 1/2 cups), or 2 cups jarred pitted sour cherries, drained
1/2 teaspoon almond extract
2 tablespoons cherry liqueur (optional)
2 tablespoons all-purpose flour
2 tablespoons sugar
3 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1 1/3 cups sour cream
2 teaspoons vanilla extract
1 teaspoon almond extract
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature, plus more for the pan
1 cup sugar
3 large eggs

Steps:

  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Make the streusel: Spread the almonds on a baking sheet and bake until toasted, 5 to 7 minutes; let cool and transfer to a food processor. Add the sugar, butter, flour, cinnamon, orange zest and cocoa powder and pulse until the nuts are ground and the mixture starts to clump. Refrigerate until ready to use.
  • Make the filling: Toss the cherries, almond extract and cherry liqueur, if using, in a bowl. Stir in the flour and sugar.
  • Make the cake: Whisk the flour, baking powder, baking soda and salt in a large bowl. In a small bowl, whisk the sour cream and vanilla and almond extracts. Beat the butter and sugar in a stand mixer fitted with the paddle attachment on medium speed until smooth, about 5 minutes. Scrape down the bowl. Beat in the eggs one at a time, until light and fluffy, 2 to 3 minutes.
  • Beat in half of the flour mixture on low speed until almost incorporated, then beat in half of the sour cream mixture. Beat in the remaining flour mixture, then the sour cream mixture; finish mixing the batter by hand (do not overmix).
  • Butter the bottom and sides of a 10-inch springform pan. Spread half of the batter in the pan. Sprinkle half of the streusel on top, then cover with the cherry filling. Drop spoonfuls of the remaining batter on top of the cherries and smooth with the back of a spoon. Top with the remaining streusel.
  • Bake on the lower oven rack until the cake springs back in the center when pressed, about 1 hour, 20 minutes. Transfer to a rack to cool. Run a knife around the inside of the pan, then remove the side.
