CHIPOTLE CHEDDAR SPREAD

Chipotle Cheddar Spread image

Recipe from - http://coconutlime.blogspot.com/2008/06/chipotle-cheese-spread.html Chef notes from the site-- I came up with this recipe as sort of an homage to that Southern staple Pimento cheese. Rather than use it as a simple cold spread, I topped my burgers with it and allowed it to melt a bit on the grill. Yum! Smoky, spicy, cheesy. What's not to love? It is also extremely tasty cold on a sandwich or on some crackers. Or wedged in the grooves of some celery. It is smoky, spicy and more than a little addictive.

Tips:

  • For a smoky and flavorful chipotle spread, use dried chipotle peppers. Remove the seeds before rehydrating them to reduce the heat. If you prefer a milder spread, use canned chipotle peppers in adobo sauce instead.
  • Roast the chipotle peppers before using them to enhance their flavor. You can roast them in a skillet over medium heat or in a toaster oven at 350°F for 10-12 minutes, flipping them halfway through.
  • Use a food processor or blender to make the spread. This will help to create a smooth and creamy consistency.
  • Add other ingredients to taste, such as lime juice, cilantro, garlic, or cumin. You can also add a bit of sour cream or yogurt for a tangy flavor.
  • Serve the spread with tortilla chips, crackers, or vegetables. It can also be used as a marinade for chicken or fish.

Chipotle spread is a versatile and flavorful condiment that can be used in a variety of ways. It is easy to make and can be customized to taste. Whether you are using it as a spread, a dip, or a marinade, chipotle spread is sure to add a delicious smoky flavor to your next dish.
