Yield Serves 2

Number Of Ingredients 15

For chicken
2 cups water
four 1/4-inch-thick slices fresh gingerroot
1/4 cup Scotch
1 whole skinless boneless chicken breast (about 3/4 pound)
For Chinese garlic sauce
1 tablespoon soy sauce
2 garlic cloves, minced
1 1/2 teaspoons rice vinegar (not seasoned)
1 1/4 teaspoons sugar
1 teaspoon Asian chili oil, or
1 teaspoon Asian sesame oil
plus Tabasco to taste
Garnish: 3 tablespoons chopped coriander sprigs
Accompaniment if desired:sesame orzo with charred scallions

Steps:

  • Poach chicken: In a 1 1/2-quart saucepan bring water to a boil with gingerroot, Scotch, and salt to taste. Add chicken and simmer, covered, 12 minutes, or until just cooked through. Transfer chicken with tongs to a bowl and chill, covered, 20 minutes.
  • Make sauce while chicken is cooling: In a bowl stir together sauce ingredients until sugar is dissolved.
  • Halve chicken and cut across grain into thin slices. Spoon sauce over chicken and sprinkle with coriander.

Tips:

  • Choose the right chicken: A whole chicken is ideal for poaching, as it will give you a more flavorful broth and tender meat. If you're using boneless, skinless chicken breasts, be sure to pound them thin before cooking so they cook evenly.
  • Use a large pot: The chicken should be completely submerged in the poaching liquid, so be sure to use a pot that is large enough to accommodate it.
  • Don't boil the chicken: The key to poaching chicken is to keep the water at a gentle simmer. If the water boils, the chicken will toughen.
  • Season the poaching liquid: Add some aromatics, such as ginger, garlic, and scallions, to the poaching liquid to infuse the chicken with flavor.
  • Let the chicken cool in the poaching liquid: This will help the chicken stay moist and flavorful.
  • Serve the chicken with a dipping sauce: A simple soy sauce and vinegar dipping sauce is a classic accompaniment to poached chicken.

Conclusion:

Poached chicken is a versatile dish that can be enjoyed in many different ways. It can be served as a main course with rice or noodles, or it can be used in salads, sandwiches, and wraps. It's also a great way to meal prep for the week ahead. With its tender meat and flavorful broth, poached chicken is a healthy and delicious option for any meal.
