½ cup green peas

Steps:

  • Boil ramen noodles for 3 minutes, or until softened, without flavor packets. Reserve flavor packets. Drain noodles, and set aside.
  • Heat 1 tablespoon oil in a small skillet. Scramble eggs in a bowl. Cook and stir in hot oil until firm. Set aside.
  • In a separate skillet, heat 1 teaspoon of oil over medium heat. Cook and stir green onions in oil for 2 to 3 minutes, or until softened. Transfer to a separate dish, and set aside.   • Combine the marinade ingredients in a medium sized bowl, and soak the flank steak in the marinade for 1 hour.
  • In a hot wok over the highest heat, add 3 tablespoons of the oil and black bean sauce. Using the Chinese ladle, spread the bean sauce in the wok until nice roasted smell comes out. Add the beef and stir-fry for 2 minutes. Do not over cook! Remove the beef and set aside.

3 tablespoons balsamic vinegar
4 tablespoons granulated sugar
1 tablespoon kosher salt, plus additional for cooking pasta
2 teaspoons Fresh Chile Oil, recipe follows
12 scallions, roots trimmed, green and white parts thinly sliced, divided
1 pound 1/16-inch long thin noodles, regular spaghetti, or fresh Chinese egg noodles
8 fresh red cayenne chile peppers
2 fresh red Scotch bonnet chile peppers
1 cup canola oil
1 teaspoon kosher salt

Steps:

  • Bring a large pot of water to a boil. Meanwhile, in a large bowl, combine the sesame oil, black soy sauce, balsamic, sugar, salt, and Chile Oil. Whisk to blend. Stir in half of the sliced scallions. Set aside in the refrigerator.
  • When the water boils, season with salt until the water tastes like seawater. Plunge the pasta in the boiling water and cook, 3 to 5 minutes, until al dente. Place a colander in the sink. Remove the pot from the heat and pour off most of the water into the colander, catching any pasta as the water pours out.
  • Remove the colander from the sink and fill the pot still containing the pasta with cold water. You want the pasta to cool quickly by being submerged in the cold water. This will assure a chewy texture.
  • Drain the pasta thoroughly in the colander, shaking it a few times to remove excess water covering the pasta. Spread a kitchen towel on a flat surface and turn the noodles onto the towel. Gently use a second towel to dry the noodles. Removing the excess moisture assures that the sauce will have its proper flavoring effect on the noodles. Any water from cooking the pasta dilutes the noodles and makes them taste more like water than anything else. Gingerly transfer them the bowl with the sauce. Use your hands to mix the pasta and the sauce, taking care that all of the pasta gets coated. Cover with plastic and refrigerate until ready to serve.
  • These noodles can marinate for a few hours or overnight before serving. Serve them cold, tossing them again in the sauce just before serving, and garnish with the remaining scallions.
  • Remove the stems from the chiles then place in a food processor and blend until they are completely broken down.
  • Use a rubber spatula and scrape into a medium sized saute pan. Add the oil and stir well. Set the pan over medium-low heat. Gently warm up the oil slowly so it draws out the color and flavor of the chiles. Stir well and season with salt. Once the oil is barely simmering, cook for 5 to 6 minutes. hut off heat and allow to cool. Store in an airtight container until ready to use.

Steps:

  • Bring 3 quarts of water to a boil in an large pot. Add the noodles and cook according to the package directions. Drain the noodles and rinse them under cold water to stop the cooking. Lay the noodles out on paper towels to dry.
  • Heat the oil in a wok or large frying pan to 360ºF and add the noodles.
  • They will cling together forming a pancake of sorts. Fry this on one side for about 5 minutes, or until the bottom is crisp, then flip the noodle pancake with a spatula and fry the other side for 3 minutes. Drain the noodle pancake on paper towels, cover with aluminum foil, and keep in a warm place.
  • Drain all but 2 tablespoons of the oil from the wok and add the chicken. Stir-fry until it is almost cooked, about 2 minutes. Remove the chicken from the pan and add the garlic and ginger. Cook for 30 seconds, then add the onion, bok choy, broccoli, cabbage, snow peas, and carrot. Stir-fry the vegetables for 4 minutes or until the color brightens. Return the chicken to the pan, and stir in the sauce. Cover and cook 3 minutes or until the vegetables are tender and the sauce thickens.
  • Place the noodle cake on a large serving dish and top with the chicken and vegetables. Serve hot.

2 stalks bok choy
1 stalk celery, thinly sliced
2 apples, diced (I recommend a crisp, sweet-tart variety such as Fuji or Gala)
1/2 cup pecans, coarsely broken
1/2 cup canola oil or 1/2 cup other light-flavored oil
1/4 cup balsamic vinegar
1 pinch celery seed
1/4 teaspoon fresh ginger, very finely minced
1/2 teaspoon prepared brown mustard
1/2 teaspoon salt (to taste)
2 (1 g) packets Splenda sugar substitute

Steps:

  • Wash all produce as necessary.
  • Divide your half-head of napa lengthwise into 3 or 4 sections and knife-shred crosswise to yield strips about 1.5 inches long by 1/4 inch wide.
  • Divide your bok choy stalks lengthwise into 1in sections if necessary and slice thinly. Knife shred the green leaves to match the napa.
  • Mix dressing ingredients and let rest for 5 minutes to blend the flavors.
  • Toss together all salad ingredients with the dressing.
  • Garnish with pecan halves and thin rings of apple if desired.
  • Note -- Other artificial sweeteners, honey, sugar, etc. may be substituted for the Splenda if you prefer.
  • Note -- Can add chunks of cooked ham or other cooked meat to make into a main-dish salad.

But be warned - they are not easy to make and take years of experience to perfect, but keep trying!

8 cups all-purpose flour
2 ½ cups water
¼ cup vegetable oil

Steps:

  • Place flour in a large bowl and gradually mix in water. Mix until dough comes together; knead until smooth, 15 to 20 minutes. Cover with plastic wrap and let rest for 15 minutes.
  • Knead dough again for 2 minutes; cover and let rest for 15 minutes.
  • Knead dough one more time for 2 minutes. Divide into 4 equal pieces. Roll each piece into a 3/8-inch-thick sheet. Brush both sides of each sheet with oil. Stack sheet together; cover with plastic wrap and let rest for 10 to 15 minutes.
  • Fill a large saucepan with water and bring to the boil.
  • Place one sheet of dough on a cutting board and slice into 1/8-inch-wide strips. Take one end of a strip in each hand and stretch it until it is 30 to 35 inches long. Fold it in thirds and stretch again to the same length; shake and slap against the counter several times to lengthen it to 2 to 3 yards. Drop it into the boiling water. Add 2 to 3 more strips of noodles to the boiling water; cook until tender, 5 to 10 minutes. Transfer drained noodles to a serving bowl.
  • Repeat with remaining sheets of dough.

2 cups soup stock (veggie or chicken)
2 tablespoons peanut butter
4 tablespoons hot tap water
3 tablespoons light soy sauce
1 pinch sugar

garlic-red chili paste, to taste
green onion, chopped
1 tablespoon dry roasted peanuts, chopped

Steps:

  • Soak the noodles for 1 hour and drain.
  • Place in a saucepan with the soup stock and simmer until they are tender but not mushy, about 10 minutes.
  • Drain the stock from the noodles, reserving it for another use. Place the noodles on a tray and refrigerate them for one hour.
  • Mix the sauce by putting the peanut butter in a 2-cup measuring glass and adding the hot water. Stir with a fork until it is the consistency of whipping cream.
  • Add the remaining ingredients for the sauce and mix with the chilled noodles.
  • Place the noodles on a serving dish and garnish with the green onions and peanuts.

Turkey carcass (plus neck, wings and giblets, except liver, if available)
1 large onion, coarsely chopped
2 ribs celery, coarsely chopped
2 carrots, peeled and coarsely chopped
1 1/2 teaspoons salt
6 ounces uncooked Chinese noodles
1 tablespoon toasted sesame oil
5 teaspoons grated fresh ginger
4 1/2 tablespoons oyster sauce
6 tablespoons chopped cilantro

Steps:

  • First, make the broth. Combine the turkey carcass and parts, onion, celery and carrots with six quarts of water in a large pot. Bring to a boil over medium-high heat. Lower heat so that liquid is at a bare simmer. Cook, skimming the top as necessary, for 4 hours. Strain the broth and remove the grease. Place in a clean pot and simmer until reduced to 6 cups, about 1 1/2 hours. Broth may be cooked ahead and refrigerated or frozen.
  • To complete the soup, heat the broth if it has been stored. Season with the salt. Cook the noodles according to the package directions. Drain and toss with the sesame oil, ginger, oyster sauce and cilantro. Divide the noodles among 6 bowls and top with the turkey and scallions. Pour the broth over the noodles and serve immediately.

I love good dumplings, but lately I've been experimenting with making dumplings with more that just flour and spice. These pork dumplings are packed with flavor, and go well with a nice bowl of Chinese noodles. So, are you ready... Let's get cooking.

THE DUMPLINGS
1 lb lean ground pork
1 egg white, lightly beaten
2 tsp soy or tamari sauce
2 Tbsp fresh cilantro, chopped, plus more for garnish
1 Tbsp fresh ginger, grated
2 Tbsp cornstarch, or arrowroot powder
THE SOUP

1 tsp fish sauce
4 medium green onions, cut into 1-inch lengths
4-6 medium white button mushrooms, stems removed, and quartered
1 c frozen peas
1 large carrot, cut on the bias into 1/2 inch lengths
2 pkg dried chinese noodles

Steps:

  • 1. THE DUMPLINGS
  • 2. In a large bowl, combine the ground pork, egg white, soy sauce (or tamari), cilantro, and ginger, and mix with your hands to thoroughly combine.
  • 3. Chef's Note: What is Tamari? Tamari is a type of soy sauce, specifically Japanese soy sauce. When compared side by side, you'll immediately notice that tamari is deeper brown, and slightly thicker, than ordinary soy sauce. While similar in taste, the one advantage of tamari is that you can get it gluten free.
  • 4. Shape into small balls, about the size of a golf ball.
  • 5. Spread the cornstarch (or arrowroot) onto a piece of parchment, and roll the pork dumplings until completely coated.
  • 6. Chef's Note: What is Arrowroot? We use cornstarch as a thickening and binding agent; however, some people have allergies to corn products, in which case arrowroot is an excellent replacement.
  • 7. THE SOUP
  • 8. Place the chicken stock and fish sauce into a large pot and bring to the boil.
  • 9. Reduce to a simmer, and add the pork dumplings. Keep the pot at a simmer.
  • 10. Cook for ten minutes, uncovered.
  • 11. Add the vegetables, and continue to cook uncovered for 2 to 3 minutes. The vegetables should be tender but still crisp.
  • 12. While the veggies are simmering, pour boiling water over the Chinese noodles to loosen them.
  • 13. Chef's Tip: There are all kinds of dried Chinese noodles out there; including rice noodles. Use what suits your taste, and go for it.
  • 14. Drain them out of the water, and add them to the pot.
  • 15. Continue to simmer for 2 minutes, until the noodles soften.
  • 16. Serve immediately, in bowls with an additional garnish of chopped cilantro, and just maybe some nice warm sake.
  • 17. Keep the faith, and keep cooking.

Tips:

  • Choose the right noodles: There are many different types of Chinese noodles, each with its own unique texture and flavor. For stir-fried noodles, thin noodles like rice vermicelli or thin egg noodles are a good choice. For soups and stews, thicker noodles like udon or ramen are a better option.
  • Cook the noodles properly: Be sure to cook the noodles according to the package directions. Overcooked noodles will be mushy and unpleasant to eat.
  • Use fresh vegetables: Fresh vegetables will give your dish a vibrant flavor and color. If you don't have fresh vegetables on hand, frozen vegetables can be used in a pinch.
