6 tbsp. Bacon Grease Or Butter, For Frying, Divided
3 whole Large Eggs, Beaten
1/2 Small Onion, Finely Chopped
4 oz. weight Button Mushrooms, Sliced
1 Green Bell Pepper, Chopped
Salt And Pepper, to taste
1 lb. Breakfast Sausage
4 c. Cold, Cooked Rice
1/4 tsp. Dried Sage
Fried Eggs, For Serving

Steps:

  • Melt 2 tablespoons bacon grease in a 12-inch cast iron skillet over medium heat. Add eggs and scramble until not quite set. Remove to a plate.Add another 1-2 tablespoons bacon grease to the now-empty pan and add onion. Cook until tender. Add mushrooms and peppers and cook until tender. Remove all to a plate.Cook breakfast sausage until no longer pink. Remove to a plate.Add remaining 2 tablespoons bacon grease to the pan. Once it's hot, add cold rice. Cook, stirring often, until rice is hot and begins to brown. Add all of the cooked ingredients back to the pan, stir, and cook until hot.Serve immediately with fried eggs, butter, ketchup, and possibly a drizzle of maple syrup.

5 tbsp. Avocado Oil For Frying
3 Large Eggs, Beaten
1/2 Large Onion, Finely Chopped
3 oz. weight Shiitake Mushrooms, Stems Removed And Thinly Sliced
1 Large Carrot, Cut In Half Lengthwise And Thinly Sliced
1/2 Zucchini, Cut In Half Lengthwise And Thinly Sliced
1/2 Red Bell Pepper, Diced Small
1 c. Packed Spinach
1 c. Frozen Green Peas
2 cloves Garlic, Minced
Salt And Pepper, to taste
1 lb. Chicken Thighs, Cut Into Bite-sized Pieces
2 tbsp. Butter
4 c. Cold, Cooked Rice
3 tbsp. Soy Sauce
2 tsp. Cane Sugar
1 tsp. Toasted Sesame Oil
Butter And Hot Sauce, To Serve (optional)

Steps:

  • Heat about a tablespoon of avocado oil in a large (12-inch) cast iron skillet over medium-high heat. Add the beaten eggs and scramble until not quite fully set. Remove from pan and set aside.Add another tablespoon of avocado oil to the now-clean pan. Add the onions and mushrooms and cook, stirring frequently, for 5 minutes. Add the carrot, zucchini, bell pepper, spinach, and green peas and cook, stirring frequently, until carrots are tender crisp, about 3-5 minutes. Add the garlic and cook for another 2 minutes. Season to taste with salt and pepper. Remove veggies from pan.Add a bit more avocado oil to the clean pan and add the chicken. Cook until no longer pink in the middle, about 8-10 minutes. Season with salt and pepper to taste. Remove from pan.Add 2 tablespoons of avocado oil and butter to the now-empty pan (it's okay if there's some crispy bits from chicken still in the pan) and turn the heat up to high. Once the butter melts, add the rice. Gently break up any large clumps. Cook, stirring frequently, until rice is hot and turning brown here and there. Meanwhile, whisk together the soy sauce, sugar, and sesame oil.Return the eggs, veggies, and chicken to the pan. Add the soy sauce mixture and give everything a good stir. Heat until everything is nice and hot. Serve immediately with green onions, butter and hot sauce (gochujang is my favorite).

4 scallions, sliced, white and green parts separated
1 red bell pepper, diced
1 cup shelled edamame, thawed if using frozen
2 cloves garlic, chopped
2 large eggs
2 tablespoons low-sodium soy sauce, plus more if needed
2 cups cooked long-grain white rice

Steps:

  • Heat the oil in a large skillet. Add the scallion whites and bell peppers and cook until just starting to soften, a few minutes. Stir in the edamame and garlic, then cook for 30 seconds.
  • Break the eggs into the skillet and stir-fry them quickly to scramble them. Add the soy sauce. Add the rice and stir it around to cook it for a couple of minutes. Add more soy sauce if you like.

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce (add more if you like)

Steps:

  • Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
  • Allow wok to cool slightly.
  • Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.

1 green bell pepper, diced
2 cloves garlic, minced
2 tablespoons jarred pizza sauce
1 teaspoon crushed red pepper
3 cups leftover cooked rice
One 8-ounce can pineapple chunks, drained
1 cup mozzarella pearls or cubed fresh mozzarella
1/4 cup fresh basil leaves
Kosher salt and freshly ground black pepper

Steps:

  • Heat the olive oil in a cast-iron skillet over medium-high heat until hot, then add the pepperoni, onion, bell pepper and garlic. Cook until the onion has softened and the pepperoni has crisped slightly, about 3 minutes. Add the pizza sauce and crushed red pepper, then stir.

1 orange bell pepper, diced
1 red bell pepper, diced

3 cups leftover rice
One 8-ounce can pineapple chunks, drained
1 cup frozen peas, thawed
1/4 cup low-sodium soy sauce
2 tablespoons honey
1 lime, juiced
2 tablespoons sesame seeds
1/2 cup mayonnaise
2 tablespoons BBQ sauce
Dash sesame oil
Asian chile sauce, to taste

Steps:

Pinch red pepper flakes
Freshly ground black pepper
4 cups leftover cooked rice
1 tablespoon Worcestershire sauce
1 tablespoon hot sauce, or more to taste

1/2 bunch fresh cilantro, chopped

1 tablespoon brown sugar
1 tablespoon grated ginger
1 tablespoon chili paste
2 cloves garlic, grated
2 tablespoons olive oil
2 tablespoons butter
4 large eggs, lightly beaten
1 cup frozen edamame
2 cups frozen corn and pepper mix
2 cups bagged riced cauliflower
2 cups bagged riced sweet potatoes
2 scallions, green parts sliced thin
1/4 cup fresh cilantro leaves
1 tablespoon sesame seeds

Steps:

  • Place a large skillet over medium-high heat.
  • In a small mason jar, add the soy, sugar, ginger, chili paste and garlic. Secure the lid and shake to combine. Set aside.
