4 split chicken breasts (bone-in, skin-on)
Good olive oil
Kosher salt

2 scallions (white and green parts), sliced diagonally
1 tablespoon white sesame seeds, toasted
1/2 cup vegetable oil
1/4 cup good apple cider vinegar
3 tablespoons soy sauce

  • For the best flavor, use freshly cooked chicken. Rotisserie chicken is a great option, or you can boil or bake your own chicken breasts.
  • Make sure to use a good quality mayonnaise. A homemade mayonnaise will give you the best flavor, but you can also use a store-bought mayonnaise if you prefer.
  • Use a variety of vegetables in your salad. Some good options include shredded cabbage, carrots, celery, and green onions.
